Ingredients Needed
White Beans. Canned white beans are the base. They come out so creamy, even creamier then garbanzo beans.
Dill Pickles. I go for the spears, but you can use any shape of choice (one that you will continue to eat throughout the week).
Sesame Seeds. I use these as a garnish
Seasonings. Cumin, Salt, dried dill (in addition to fresh basil for more flavor), dried basil.
All other ingredients and measurements can be found in the recipe card below.
Recipe Variations
White Beans. Northern beans or cannellini beans will also work great.
Dill Pickles. You can also use sweet/spicy pickles.
Olive Oil. Avocado oil will also work great.
Shallot. This can be omitted, it just adds a little depth of flavor.
Steps To Make Dill Pickle Hummus
Step One. Drain and rinse the canned white beans thoroughly. This helps remove excess sodium and gives you a smoother consistency when blending. In a food processor, add the white beans, dill pickles, tahini, olive oil, garlic, fresh dill, dried dill, black pepper, cumin, and salt. Remember, the pickle juice will be added later.
Step Two. Pulse the ingredients until they start to combine. As the mixture starts to come together, slowly add the chilled pickle juice. The pickle juice not only adds flavor but also helps achieve the desired creamy texture.
Step Three. Continue blending until the mixture becomes smooth and creamy. If you find the hummus to be thicker than you'd like, add the cold water a little at a time until you reach your desired consistency. Taste the hummus and adjust the seasoning if needed. Then, drop in an ice cube and blend again. The ice cube helps maintain the hummus's freshness and gives it a light, airy texture.
Step Four. Transfer the Creamy Dill Pickle Hummus to a serving bowl. Drizzle some extra virgin olive oil on top and sprinkle with sesame seeds and freshly chopped parsley for a burst of color and added visual appeal.
If you happen to have any leftovers (which might be unlikely!), store the hummus in an airtight container in the refrigerator. It should stay fresh for a four days, allowing you to enjoy this unique and delicious dip whenever you please.
Recipe FAQs
Technically, you can freeze Dill Pickle Hummus, but keep in mind that the texture might change once it's thawed. The water content from the pickles could affect the smooth consistency. If you do decide to freeze it, be sure to thaw it in the refrigerator and give it a good stir before serving.
Absolutely! The amount of pickle juice can be adjusted to your taste preferences. If you prefer a milder pickle flavor, you can start by adding a smaller amount and gradually increase it until you're satisfied with the taste.
Recipe Tips
Gradual Pickle Juice Addition: Start with a small amount of pickle juice and gradually add more to achieve your desired level of tanginess.
Blend Thoroughly: Blend the ingredients well for a creamy texture. Don't rush this step; a few extra seconds can make a difference.
Consistency Control: Adjust the cold water and ice cube to control the thickness of your hummus. Less water for a thicker dip, more for a smoother one.
Mindful Salt Use: Due to the saltiness of pickles, add salt cautiously. You can always add more later if needed.
Creative Garnishes: Elevate your hummus's appearance and flavor with garnishes like sesame seeds, olive oil drizzle, or chopped fresh dill.
Recipe Pairings
This goes wonderfully with fresh veggies for dipping like carrots, cucumbers, snap peas, tomatoes and peppers. Or you can dip tortilla chips, toasted pita or Garlic Rolls into it.
