Ingredient Notes

Ingredients to make dill pickle hummus on the table before making.
  • White Beans. Canned white beans are the base of this hummus recipe. While garbanzo beans are traditional for hummus, I find the white beans make this dip so silky and smooth but you can also use Northern beans or cannellini beans as well.
  • Dill Pickles. I go for the spears but you can use any shape of choice. Choose a brand you absolutely love and one that you will continue to eat throughout the week. We will be adding the pickles and some of the pickle juice for flavor and consistency.
  • Tahini & Sesame Seeds: A paste made from sesame seeds brings traditional hummus flavors and helps give the dip it’s classic consistency. I also use some sesame seeds for garnish on the top.
  • Olive Oil: The best healthy oil to use when making hummus but avocado oil will also work great.
  • Dill: I use a combination of fresh dill and dried dill to enhance the dill pickle flavor in the dip.
  • Other Seasonings. Cumin, salt, and dried basil balance and enhance the flavors.

Recipe Variations

  • Sweet Pickle Hummus: Use your favorite sweet pickles to change up the flavor. You can even choose flavored pickles such as those with garlic or chilies added to create a pickle and hummus combination you love!
  • More Traditional Texture: Use garbanzo beans for a less creamy texture and more classic style of hummus.
  • Chunky Pickle Dip: Stir in some diced dill pickle after you’ve created your smooth and creamy hummus base.
  • Spicy Pickle Hummus: Add a pinch or two of red pepper flakes, diced jalapeno, or spicy pickles to create a dip with a little heat.

How To Make Dill Pickle Hummus

Step One. Add the drained and rinsed white beans, dill pickles, tahini, olive oil, garlic, fresh dill, dried dill, black pepper, cumin, and salt to a blender or food processor.

Step Two. Pulse the ingredients until they start to combine. As the mixture starts to blend and come together, slowly add the chilled pickle juice. The pickle juice not only adds flavor but also helps achieve the desired creamy texture.

Step Three. Continue blending until the mixture becomes smooth and creamy. At this point you can add some cold water if you prefer a thinner consistency. Taste the hummus and adjust the seasoning if needed. Add an ice cube and blend again. The ice cube helps maintain the freshness of the hummus and gives it a light, airy texture.

What to Eat With Dill Pickle Hummus

Garnish the hummus with a drizzle of extra virgin olive oil on top and sprinkle with sesame seeds and freshly chopped parsley for a burst of color and added visual appeal.

This goes wonderfully with fresh veggies for dipping like carrots, cucumbers, snap peas, tomatoes and peppers. Or you can dip tortilla chips, toasted pita or Garlic Rolls into it.

Use this hummus as a spread on Turkey Burgers, sandwiches or the base for my Mediterranean Flatbread. You can also thin out your dill hummus with a bit of liquid and drizzle it over a Burger Bowl.

  • Gradual Pickle Juice Addition: Start with a small amount of pickle juice and gradually add more to achieve your desired level of tanginess.
  • Blend Thoroughly: Blend the ingredients well for a creamy texture. Don’t rush this step; a few extra seconds can make a difference.
  • Consistency Control: Adjust the cold water and ice cube to control the thickness of your hummus. Less water for a thicker dip, more for a smoother one.
  • Mindful Salt Use: Due to the saltiness of pickles, add salt cautiously. You can always add more later if needed.
  • Creative Garnishes: Elevate your hummus’s appearance and flavor with garnishes like sesame seeds, olive oil drizzle, or chopped fresh dill.

Storing Tips

This zesty hummus recipe is perfect for preparing ahead as its flavor improves with time. Transfer the dip to an airtight jar or container and refrigerate for up to 5 days. For added freshness, drizzle a thin layer of olive oil over the top before sealing the container.

When you’re ready to serve again, simply stir it up, and refresh the garnishes.

Can I freeze hummus with dill pickles?

Technically, you can freeze it but keep in mind that the texture might change once it’s thawed. The water content from the pickles could affect the smooth consistency. If you do decide to freeze it, be sure to thaw it in the refrigerator and give it a good stir before serving.

Can I Adjust the Amount of Pickle Juice?

Absolutely! The amount of pickle juice can be adjusted to your taste preferences. If you prefer a milder pickle flavor, you can start by adding a smaller amount and gradually increase it until you’re satisfied with the taste.

Can I Use Any Type of Pickles for This Recipe?

In my opinion the best pickles to use are Vlasic or Claussen pickles for their bright flavor and ideal crunch. Really you can use any pickle you love! Just make sure it’s one you enjoy eating on its own as this will be a great signal it will work in your pickle dip.

Dill Pickle Hummus

Ingredients 

  • 2 15 oz cans white beans, great northern beans or cannelleni beans will also work.
  • ¼ cup tahini
  • 2 garlic cloves
  • 1 tsp shallot
  • 1 Tbsp fresh dill , you will need a little extra for garnish!
  • ½ Tbsp dried dill
  • 1 tsp dried basil
  • ½ tsp black pepper
  • ½ tsp cumin
  • 1 tsp salt, more as needed
  • ¼ cup extra virgin olive oil
  • cup dill pickles, chopped, I love Vlasic or Claussen but any pickle shape or brand will work great. 
  • cup dill pickle juice
  • ¼ cup water
  • 2 ice cubes
  • 1 Tbsp sesame seeds, for garnish

Instructions 

  • Drain and rinse the canned white beans thoroughly. This helps remove excess sodium and gives you a smoother consistency when blending. In a food processor, add the white beans, dill pickles, tahini, olive oil, garlic, fresh dill, dried dill, black pepper, cumin, and salt. Remember, the pickle juice will be added later.
  • Pulse the ingredients until they start to combine. As the mixture starts to come together, slowly add the chilled pickle juice. The pickle juice not only adds flavor but also helps achieve the desired creamy texture.
  • Continue blending until the mixture becomes smooth and creamy. If you find the hummus to be thicker than you'd like, add the cold water a little at a time until you reach your desired consistency. Taste the hummus and adjust the seasoning if needed. Then, drop in an ice cube and blend again. The ice cube helps maintain the hummus's freshness.
  • Transfer the hummus to a serving bowl. Drizzle some extra virgin olive oil on top and sprinkle with sesame seeds and freshly chopped parsley for a burst of color and added visual appeal.
