Why Make Mediterranean Wraps

Thee wraps are going to blow you away with feel good flavors. They are a great handheld easy dinner or lunch. You can add so many veggies and you can even keep them vegetarian if preferred. I love wraps (incase you are new here!) Try my Grilled Chicken Wraps or Pesto Wraps to start!

  • Customize Them! If you want to make it vegetarian skip the chicken, you can add or skip any veggies in the recipe the whole thing is very customizable.
  • Meal Prep Friendly. You can make these wraps ahead of time and have them ready to for the week!
  • Handheld. Yep they are a perfect handheld meal in one. Perfect for on the go.

All other ingredients and measurements can be found in the recipe card towards the bottom of this post. 

  • Marinated Chicken. Marinate chicken breasts and/or thighs. I use lemon juice, olive oil, seasonings (in the recipe card below). You can cut the time in half for this recipe and use rotisserie chicken instead if desired.
  • Hummus. I make my own Creamy Hummus. You can also try Dill Pickle Hummus or use pre made hummus.
  • Wraps. I use large burrito sized tortillas but any wrap of choice will work. You can also use lettuce wraps.
  • Feta. Goat cheese will also work.
  • Veggies. Onions, peppers, shredded romaine, cucumber, tomatoes. You cal add zucchini or mushrooms in addition if desired.
  • Olives. I use green olives and kalamata olives. Any olice of choice will work. You can sub pickles if desired.

Recipe Variations

  • Vegetarian. Make this vegetarian by skipping the chicken, you can use tofu or just keep it with veggies for a delicious meal.
  • Gluten Free. Use a gluten free wrap or use a lettuce wrap to make it low carb.
  • Make it more filling, Add cooked quinoa or rice to the wrap.

Steps To Make This Recipe

Ready to start cooking? Great! Grab your knife, bowls and a skillet and let’s get these Mediterranean Chicken Wraps made.

Steps to make Mediterranean chicken in a skillet.

Step One. Marinate the chicken for as long as you can(20 minutes to a few hours)! Then cook it up in a skillet on medium high heat (photo 1).

Step Two. Once the chicken is cooked through, set it aside on a plate to rest, add the sliced peppers and onions to the same skillet (photo 2) .

Step Three. Let the veggies cook down well. Meanwhile gather all the add ins and get them ready to build these wraps (photo 3).

Step Four. You can either toast the wrap/tortilla before or after its stuffed full. I prefer it both ways, do whatever you feel comfortable.

Store the leftovers or additional wraps in an airtight container in the fridge for up to 4 days! Or you can freeze them in an airtight bag for up to 2 months.

Plate with a wrap up close with lettuce and tomato.

  • Don’t overcook the chicken. Be sure to check the internal temp gets to 165º F. Use chicken thighs for the ultimate juice chicken.
  • Marinate chicken if you have time. If you have some extra time, I highly recommend you marinate the chicken for at least 20 minutes before cooking.
  • Cut back on time. Use rotisserie chicken and preprepared hummus to cut down half the time.

Mediterranean Wraps

These Mediterranean Chicken Wraps are a flavor burst you will love. They are full of nutritious, colorful, fresh ingredients.

Equipment

  • heavy bottomed skillet
  • sharp knife

Ingredients 

Marinated Chicken

  • 1 lb chicken breasts, or thighs. Rotisserie will also work.
  • 1 lemon, squeezed
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • ½ tsp Italian Seasoning Blend , (dried oregano, dried basil, dried thyme)
  • ½ tsp salt
  • ½ tsp smoked paprika

Mediterranean Wraps

  • 4-6 large tortillas
  • 1 cup hummus
  • ¼ cup cucumber, sliced
  • ¼ cup tomatoes, chopped
  • 1 cup romaine, shredded
  • ¼ cup feta
  • ¼ cup olives, chopped , kalamata or green olives.
  • 1 bell pepper, sliced and sautéed
  • ½ red onion, sliced and sautéed

Instructions 

Marinated Chicken

  • If you are using rotisserie chicken, skip this step. In a large bowl, slice breasts in half and add all the marinade ingredients. Marinate the chicken for 20 minutes (if you have the time). In a large skillet, heat 1 tsp oil on medium/high head. Add the marinated chicken.
  • Cook the chicken for about 8-10 minutes on each side. I like to flip it a few times throughout the cooking process. Cook until the internal temp reaches 165ºF. Once chicken is cooked through, transfer to a plate and add peppers and onions to the same skillet.

Sautéed Peppers and Onions

  • Add Peppers and onions to the same skillet chicken was in, or use a fresh skillet. Add 1 tsp of oil and sauté them down until sweating and soft (about 5 minutes). Season with a pinch of salt.

Mediterranean Wraps

  • Assemble the wraps! I toast my tortillas for 45 seconds on the stove, this is optional. Start with spreading the hummus and then add all the toppings to the wrap. Fold the bottom up halfway, fold in the sides and poke with a toothpick to keep it closed.
  • Serve with sriracha and extra hummus is desired. Enjoy!

Notes

Please note cooking time will be less if using rotisserie chicken. I prefer the citrusy, marinated chicken ๐Ÿ™‚ but both are wonderful.
