Why Make These Italian Wraps

The wraps are the best of both worlds. It’s a delicious, easy chopped salad with homemade Italian dressing all wrapped up in a handheld wrap. The wraps are customizable, they come together quick and are chock full of flavor. You can also enjoy this chopped Italian salad without the wrap, it’s really tasty as is. These chopped italian wraps are also still really tasty to enjoy the next day, so leftovers are great.

Ingredients Needed

Ingredients to make this recipe on a counter.

Salami. I like to buy high quality salami for the ultimate flavor. You can use any salami of choice. I fine the round cut slices are easiest to chop into bite sized pieces.

Pepperoni. Not a traditional ingredient in Italian salads but I love the soft texture it brings mixed with salami.

Romaine Lettuce. I love romaine it is one of my favorite salad bases with the crunch, but please feel free to use spinach or any other green you prefer.

Peperoncini. These little peppers add a great mild tangy pepper that are pickled and offer a great zest.

Black Olives. I just used canned, pitted black olives. They add a little salt and texture.

Red Onion. Red onion adds a bit of flavor and color to the zesty salad.

Tomatoes. Cherry tomatoes are perfect for this chopped italian salad. But you can really use any tomato of choice.

Parmesan. Shaved or shredded Parmesan is the nutty/salty gold in this salad, it pairs so well.

Mozzarella. Use shredded mozzarella or mini mozzarella balls in this salad.

Wraps. Use your favorite store bought wrap a burrito sized tortilla will also work well.

Zesty Italian Dressing

Seasoning. Garlic, dried oregano, salt, pepper, dried basil, red pepper flakes.

Red Wine Vinegar. You can use a white vinegar but I prefer the red wine vinegar for flavor I find it’s a bit less harsh with flavor.

Olive Oil. A high quality neutral extra virgin oil will work best.

Dijon Mustard. This is optional but it adds a little extra tang to the recipe!

Recipe Variations

Romaine. Spinach or mixed greens will also work.

Salami. Use all pepperoni or you can also use summer sausage.

Olives. Any color of olive will work great in this salad.

Peperoncini. You can sub banana peppers if needed. Roasted red bell peppers also work well.

Vegan. Make this salad vegan bu using a vegan pepperoni and Parmesan.

Red Wine Vinegar. White vinegar will work.

Steps To Make This Recipe

Step One. Start with chopping the romaine and add it to a big bowl. Next, chop all the other ingredients into small bites. Add them all to a big bowl.

Step Two. Make dressing. Simply add the dressing Ingredients to a jar and shake or to a bowl and whisk well, pour over salad immediately after. When making the dressing ahead of time, be sure to shake or mix well before adding to the salad as the seasonings can settle to the bottom.

Step Three. Let the salad rest for a bit, 5-10 minutes and let it soak up the dressing and soften. This will help keep the wraps together. Once it’s softened, assemble the Italian wrap and enjoy!

Can this be made vegetarian?

Yes, these Italian wraps can be made vegetarian.

How long will this salad and wraps keep?

These keep for 24 hours. The salad gets a little less crunchy but it tends to stick together well for the wraps if it sits for a bit.

Italian Wraps

Equipment

  • sharp knife

Ingredients 

  • 1 head of romaine, (about 6-7 cups chopped)
  • ¼ cup red onion, chopped
  • cup parmesan
  • ½ cup peperocini
  • ½ cup cherry tomatoes
  • cup black olives
  • ½ cup salami
  • ¼ cup pepperoni
  • 4 wraps, *any of choice
  • ¼ cup mozzarella , small balls or shredded

Italian Dressing

  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • 1 tsp dried basil
  • ½ cup olive oil
  • ½ tsp red pepper flakes
  • 2 Tbsp red wine vinegar
  • 1 tsp Dijon Mustard , this is optional***

Instructions 

  • Start with chopping the romaine and add it to a big bowl. Next, chop all the other ingredients into small bites. Add them all and Parmesan to a big bowl.
  • Make the italian dressing next. Simply add the Ingredients to a jar and shake or add to a bowl and whisk well, pour over salad immediately after. If you make the dressing ahead of time, just be sure to shake/mix well before adding to the salad as the seasonings can settle to the bottom. 
  • Toss the salad well and add mozzarella balls to the top. Let the salad sit for a few minutes to soften and soak up the dressing before assembling wraps. This will help keep the wraps together as well.
