Course: lunch, Main Course
Cuisine: Italian
Diet: Gluten Free
Servings: 4
- 1 head of romaine (about 6-7 cups chopped)
- ¼ cup red onion, chopped
- ⅓ cup parmesan
- ½ cup peperocini
- ½ cup cherry tomatoes
- ⅓ cup black olives
- ½ cup salami
- ¼ cup pepperoni
- 4 wraps *any of choice
- ¼ cup mozzarella small balls or shredded
Italian Dressing
- 1 tsp garlic powder
- ½ tsp dried oregano
- 1 tsp dried basil
- ½ cup olive oil
- ½ tsp red pepper flakes
- 2 Tbsp red wine vinegar
- 1 tsp Dijon Mustard this is optional***
Start with chopping the romaine and add it to a big bowl. Next, chop all the other ingredients into small bites. Add them all and Parmesan to a big bowl.
Make the italian dressing next. Simply add the Ingredients to a jar and shake or add to a bowl and whisk well, pour over salad immediately after. If you make the dressing ahead of time, just be sure to shake/mix well before adding to the salad as the seasonings can settle to the bottom.
Toss the salad well and add mozzarella balls to the top. Let the salad sit for a few minutes to soften and soak up the dressing before assembling wraps. This will help keep the wraps together as well.
*plant based Parmesan and pepperonis will also work
*The salad holds together best if you allow it to soften and soak before assembling wraps.
