Italian Wraps

Easy, insanely good Italian wraps are flavorful and a wonderful change up from the traditional Italian chopped salad.

Equipment

  • sharp knife

Ingredients

  • 1 head of romaine (about 6-7 cups chopped)
  • ¼ cup red onion, chopped
  • cup parmesan
  • ½ cup peperocini
  • ½ cup cherry tomatoes
  • cup black olives
  • ½ cup salami
  • ¼ cup pepperoni
  • 4 wraps *any of choice
  • ¼ cup mozzarella small balls or shredded

Italian Dressing

  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • 1 tsp dried basil
  • ½ cup olive oil
  • ½ tsp red pepper flakes
  • 2 Tbsp red wine vinegar
  • 1 tsp Dijon Mustard this is optional***

Instructions

  • Start with chopping the romaine and add it to a big bowl. Next, chop all the other ingredients into small bites. Add them all and Parmesan to a big bowl.
  • Make the italian dressing next. Simply add the Ingredients to a jar and shake or add to a bowl and whisk well, pour over salad immediately after. If you make the dressing ahead of time, just be sure to shake/mix well before adding to the salad as the seasonings can settle to the bottom. 
  • Toss the salad well and add mozzarella balls to the top. Let the salad sit for a few minutes to soften and soak up the dressing before assembling wraps. This will help keep the wraps together as well.

Notes

*plant based Parmesan and pepperonis will also work
*The salad holds together best if you allow it to soften and soak before assembling wraps.
