My homemade Turkey Sausage recipe is juicy, flavorful, and perfect for breakfast. This healthy recipe is made with simple ingredients and cooks within minutes. Serve it with eggs, veggies, or as a breakfast casserole for a filling meal!
Why Make Turkey Sausage
This homemade turkey breakfast sausage has all the delicious flavors while being a nutritious no-fuss recipe. It’s also easy to turn it into a casserole or into sausage breakfast burritos. It’s a must in my breakfast rotation along with my apple chicken sausage and sweet potato breakfast hash!
- Healthy breakfast. I used lean ground turkey to make this homemade sausage, which is lower in calories and fats, but high in protein and other nutrients. Plus, by making it from scratch, you’ll know exactly what’s in it!
- Super easy to make. You’ll basically only need ground turkey and a couple of seasonings to make this recipe, all in all it takes about 10 minutes to cook.
- Perfect for meal prep. You can make the sausage patties in advance and cook them in the morning for a delicious breakfast.
Ingredient Notes

- Ground turkey. I used ground turkey that is 93% lean. You can also use ground chicken if you don’t have turkey but still want to make this recipe.
- Olive oil. Or any neutral oil for pan frying.
- Spice blend. This recipe calls for ground sage, cinnamon, garlic powder, dried thyme, garlic powder, onion powder, red pepper flakes, and salt so season the turkey. You can also use paprika, marjoram, and fennel seeds.
- Brown sugar. Add just a little bit to balance the savory flavors.
Steps To Make Turkey Breakfast Sausage
Step One. In a large mixing bowl, combine ground turkey, seasonings, and brown sugar. Fully combine the seasonings with the sausage mixture using a spatula or with your hands.
Step Two. Heat the oil in a large skillet on medium heat to high heat. Add the mixed turkey sausage to the skillet. You can form them into patties or crumble them roughly with a spatula.
Step Three. Cook for 4-5 minutes, or until turkey sausage is cooked throughout. Add it to egg scrambles, omelettes, breakfast casseroles and more.
Recipe Tips
- Don’t overcook. Ground turkey can dry out quickly so avoid overcooking it. Cook the sausage just until it’s no longer pink, but still making sure it reaches an internal temperature of 165°F.
- Pair it with veggies. Serve it with bell peppers, onions, spinach, and shredded cheese for a complete breakfast.
How to Store Turkey Sausage Patties
To make your mornings easier, you can make the sausage mixture the day before and store it in the refrigerator overnight. This also helps the meat absorb more of the flavors. Then, you can fry it in the morning for an easy but wholesome breakfast.
Store cooked patties in an airtight container for up to 4 days in the fridge or freeze it for up to 4 months. When you’re ready to serve it, you can defrost in the refrigerator overnight. Then, reheat in a microwave or stovetop for a few minutes until heated through.
