Turkey Sausage

- 1 pound ground turkey
- 1 tsp olive oil
- 1 tsp sea salt
- ½ tsp tsp ground sage
- ¼ tsp cinnamon
- ½ tsp garlic powder
- ½ tsp dried thyme
- ½ tsp pepper or red pepper flakes
- ½ tsp onion powder
- 1 Tbsp brown sugar *use less if desired but it adds a nice "maple" flavor"
In a large bowl, combine ground turkey, seasonings and brown sugar. Mix well with a spatula or with your hands.
Heat the oil in a large skillet on medium/high heat. Add the mixed turkey sausage to the skillet. Chop the meat up roughly with a spatula OR you can make small sausage patties and cook them in the pan.
Continue to cook until turkey sausage is cooked throughout (165º internally). Add it to egg scrambles, omelettes, breakfast casseroles, sandwiches and more.

- Don't overcook. Ground turkey can dry out quickly so avoid overcooking it. Cook the sausage just until it's no longer pink, but still making sure it reaches an internal temperature of 165°F.
- Brown Sugar gives off a nice maple flavor to the turkey sausage, I like to use a full Tablespoon but if you are cautious feel free to use less! I promise it's so good.
- Make Turkey Patties if desired. Just form 1/4 cup patties and cook in a skillet.
