Why Make Breakfast Tortilla Quiche Bake

Breakfast is a big deal in my house, and this is one of our all-time favorites! It’s simply the best tortilla quiche recipe – packed with flavor in every bite with a perfectly crispy crust. It’s hard to choose between this quiche, our breakfast tostadas, and our breakfast enchiladas, so we’ll let you decide which one takes the crown!

  • Quick and easy recipe. Minimal prep and simple ingredients, perfect for busy mornings.
  • Meal prep breakfast. Make it ahead and enjoy it throughout the week, just reheat it and serve!
  • Healthy tortilla quiche. Packed with fresh veggies, fresh herbs, and protein from the eggs and cheese!

Ingredients Needed

All other ingredients and measurements can be found in the recipe card towards the bottom of this post. 

  • Tortillas. Use large flour tortillas or corn tortillas, just make sure they are big enough to hold your egg bake. If not, you can use multiple tortillas and overlap them.
  • Veggies. You can never go wrong with tomatoes, onions, and spinach, but it’s easily customizable. Feel free to use other vegetables like zucchini, mushrooms, bell peppers, and even broccoli.
  • Eggs. Use four large eggs or 6 medium-sized eggs. You can definitely adjust this depending on the size of your baking dish!
  • Cheese. I used feta and cottage cheese. You can use other types of cheese like shredded cheddar, mozzarella, pepper jack, or goat cheese.
  • Seasonings. Our spices are simple, all you need are garlic powder, salt, and black pepper. You can add a little bit of red pepper flakes for a spicy kick.

Recipe Variations

  • Add chopped ham, bacon, or sausages for a protein boost and a more filling meal.
  • Stir in Greek yogurt (2-3 tablespoons) for added creaminess and extra protein, although the cottage cheese really does a great job boosting the texture.

Steps To Make Tortilla Baked Quiche

  • Step One. Preheat the oven to 375º. In a large bowl, whisk the eggs, then add onions, cottage cheese, seasonings, tomatoes, cheese, spinach, and dill. Whisk together well.
  • Step Two. Place the tortilla in the round dish, making sure it covers the round dish. If you need to use two or three, this is fine too. Pour the egg mixture into the tortilla-lined baking dish.
  • Step Three. Place the baking dish in the oven. Set the timer for 20 minutes. Be sure to check the egg cook by gently wiggling the dish (with a hot pad). You may need to continue the baking time for another 5-10 minutes or until the egg mix stops moving when the dish is wiggled.
  • Step Four. Once the eggs are cooked through, let the pan cool before removing the tortilla quiche. You may want to use a spatula to release it from the baking dish. Slice the quiche into equal parts, sprinkle with fresh herbs, and serve warm with hot sauce or salsa.

Recipe Pairings

This baked quiche is already satisfying on its own, but if you’re looking for the perfect pairing, try it with a crisp mixed greens salad, warm garlic rolls, Parmesan crusted potatoes or crispy hash browns. It’s the kind of breakfast that makes getting out of bed totally worth it!

  • Pre-bake the tortilla for 5 minutes at 350°F helps it crisp up and prevents a soggy bottom once the filling is added.
  • Leave some space at the top when pouring the egg mixture to prevent spillage as it bakes and rises.
  • The quiche is ready when the center is just set and no longer jiggly. If it looks wet, bake for a few more minutes.
  • Store leftovers in an airtight container in the fridge for 4-5 days. Warm slices in the microwave for 30–45 seconds or in a 350°F oven for 5–7 minutes until heated through.

Frequently Asked Questions

Can I make this in an air fryer?

Yes, but you will need to make some adjustments. You’ll need a smaller tortilla and an oven-safe dish or cake pan that fits the air fryer. Follow the same instructions, then bake at 325°F for 12–15 minutes or until the eggs are set and the top is lightly golden.

Tortilla Quiche Bake

  • 8-inch pie dish or 8-inch baking dish

Ingredients 

  • 1 large tortilla, burrito sized
  • 4-6 eggs, add more if needed
  • cup cottage cheese
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 3 tbsp red onions
  • ¼ cup spinach, chopped
  • ¼ cup tomatoes
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh dill, chopped

Instructions

Notes

To make a large quiche, use a 9×9 baking dish, and cover the dish with large tortillas, they can be layered and use 6- 8 eggs, feel free to add extra amounts of the mix-ins for the larger version (that serves 6).
