Tortilla Quiche Bake
This delicious baked tortilla quiche will keep you full for hours! This protein-packed recipe is creamy, rich, savory with a perfect golden crust. An easy make-ahead breakfast or lunch!

- 1 large tortilla burrito sized
- 4-6 eggs add more if needed
- ⅓ cup cottage cheese
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- 3 tbsp red onions
- ¼ cup spinach chopped
- ¼ cup tomatoes
- ¼ cup feta cheese crumbled
- 2 tbsp fresh dill chopped
Preheat oven to 375º. In a large bowl add the eggs, onions, cottage cheese, seasonings, tomatoes, cheese, spinach and dill. Whisk together well.
Place the tortilla in the round dish making sure it covers the round dish. If you need to use two or three this is fine too.
Pour the egg mixture into the tortilla lined baking dish.
Place the baking dish in the oven. Set the timer for 20 minutes. Be sure to check the egg cook by gently wiggling the dish (with a hot pad).
You may need to continue the baking time for another 5-10 minutes or until the egg mix stops moving when the dish is wiggled.
Once the eggs are cooked through, let the pan cool before removing the tortilla quiche. You may want to use a spatula to release it from the baking dish.
Slice the quiche in equal parts and serve warm with hot sauce or salsa.
To make a large quiche, use a 9x9 baking dish, and cover the dish with large tortillas, they can be layered and use 6- 8 eggs, feel free to add extra amounts of the mix-ins for the larger version (that serves 6).
- Pre-bake the tortilla for 5 minutes at 350°F helps it crisp up and prevents a soggy bottom once the filling is added.
- Leave some space at the top when pouring the egg mixture to prevent spillage as it bakes and rises.
- The quiche is ready when the center is just set and no longer jiggly. If it looks wet, bake for a few more minutes.
- Store leftovers in an airtight container in the fridge for 4-5 days. Warm slices in the microwave for 30–45 seconds or in a 350°F oven for 5–7 minutes until heated through.
