Tortilla Quiche Bake

This delicious baked tortilla quiche will keep you full for hours! This protein-packed recipe is creamy, rich, savory with a perfect golden crust. An easy make-ahead breakfast or lunch!

Equipment

  • 8-inch pie dish or 8-inch baking dish

Ingredients

  • 1 large tortilla burrito sized
  • 4-6 eggs add more if needed
  • cup cottage cheese
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 3 tbsp red onions
  • ¼ cup spinach chopped
  • ¼ cup tomatoes
  • ¼ cup feta cheese crumbled
  • 2 tbsp fresh dill chopped

Instructions

  • Preheat oven to 375º. In a large bowl add the eggs, onions, cottage cheese, seasonings, tomatoes, cheese, spinach and dill. Whisk together well.
  • Place the tortilla in the round dish making sure it covers the round dish. If you need to use two or three this is fine too.
  • Pour the egg mixture into the tortilla lined baking dish.
  • Place the baking dish in the oven. Set the timer for 20 minutes. Be sure to check the egg cook by gently wiggling the dish (with a hot pad).
  • You may need to continue the baking time for another 5-10 minutes or until the egg mix stops moving when the dish is wiggled.
  • Once the eggs are cooked through, let the pan cool before removing the tortilla quiche. You may want to use a spatula to release it from the baking dish.
  • Slice the quiche in equal parts and serve warm with hot sauce or salsa.

Notes

To make a large quiche, use a 9x9 baking dish, and cover the dish with large tortillas, they can be layered and use 6- 8 eggs, feel free to add extra amounts of the mix-ins for the larger version (that serves 6).
  • Pre-bake the tortilla for 5 minutes at 350°F helps it crisp up and prevents a soggy bottom once the filling is added.
  • Leave some space at the top when pouring the egg mixture to prevent spillage as it bakes and rises.
  • The quiche is ready when the center is just set and no longer jiggly. If it looks wet, bake for a few more minutes.
  • Store leftovers in an airtight container in the fridge for 4-5 days. Warm slices in the microwave for 30–45 seconds or in a 350°F oven for 5–7 minutes until heated through.
  • Store leftovers in an airtight container in the fridge for up to 4 days. You can freeze these for up to 2 months.
