Why Make This Mixed Green Salad

This simple mixed green salad makes a great healthy side dish to so many meals. Try it with my Sweet And Sour Meatballs, or Tomato Chicken Casserole. It’s refreshing with the nutrient dense flavors and ingredients.

This salad has lots of textures which makes any salad a 10/10 in my book, for example the nuts give it crunch and the avocado adds a creaminess. It’s vibrant in color and has an unmatched creaminess from cheese and fresh avocado slices.

Enjoy this salad on it’s own or top it with Naked Chicken Tenders. You really can do so much with this dish!

Ingredients Needed To Make Mixed Greens Salad

Ingredients needed to make mixed green salad in small bowls and on a counter.

Mixed Greens. Choose any variety of mixed greens you prefer. The goal is to make a salad you love, so be sure the base of it is enjoyable.

Raw Almonds. This adds a wonderful crunch to the salad.

Lemon Honey Vinaigrette. Find the full recipe here. Additionally, you can also use any of my other dressing recipes like Creamy Pesto Dressing Or my Lemon Herb Tahini for the ultimate rich dressing.

Goat Cheese. This adds a tangy creaminess to the salad which makes it more enjoyable. This is of course optional and customizable.

Recipe Variations & Substitutions

Mixed Greens can be swapped with kale or spinach! Enjoy any variety you prefer.

Goat Cheese can be omitted or you can use feta cheese crumbles in place.

Dressing. Feel free to use any dressing of choice, because this salad is versatile lots of dressing pair well.

Almonds can be omitted or use pistachios or cashews instead! But be sure to add some crunch either way.

Steps To Make This Recipe

Step One. If making Lemon Honey Vinaigrette or any of my other homemade dressings, do this step first. Next, set the dressing aside until you are ready to serve the mixed greens salad.

Step Two. Chop the almonds into small pieces. Next, chop the green onions and any fresh herbs like parsley.

Step Three. In a large salad bowl add the mixed greens and all other ingredients to the bowl. I typically top the salad with the avocado slices but you can mix them in. Pour 1/2 – 3/4ths of the dressing over the salad. Mix well and add more dressing as needed.

Store leftovers in an airtight container in the fridge for up to 2 days. Salad will get a bit soggy if dressing is added to leftovers.

Add Fresh Herbs. I always add fresh herbs to salads to boos the flavor. Cilantro, basil, parsley all help to elevate the flavor.

If You Make Ahead Of Time. Be sure to leave the dressing off and to the side until you are ready to serve and enjoy. You can prepare the salad ahead of time and add the dressing last before servings.

Keep Mixed Greens Fresh. To keep your mixed greens as fresh as possible, add a paper towel to the bag or box of lettuce. This will help absorb water and keep the leaves more fresh for longer!

Ingredients 

  • 6-8 cups mixed greens
  • 3 Tbsp fresh parsley
  • 4 Tbsp fresh cilantro
  • ¼ cup green onions, chopped
  • cup almonds, chopped, *see notes
  • ¼ cup goat cheese, crumbled, *see notes
  • 1 small avocado, sliced
  • ⅓-½ cup Lemon Honey Vinaigrette , *see notes

Instructions 

  • If making Lemon Honey Vinaigrette or any of my other homemade dressings, do this step first. Next, set the dressing aside until you are ready to serve the mixed greens salad.
  • Chop the almonds into small pieces. Next, chop the green onions and any fresh herbs like parsley. 
  • In a large salad bowl add the mixed greens and all other ingredients to the bowl. I typically top the salad with the avocado slices but you can mix them in. Pour ½ – ¾ ths of the dressing over the salad (about ⅓ cup or more). Mix well and add more dressing as needed. 

Notes

*use any nuts or seeds of choice. Cashews, pistachios, sunflower seeds and more will work. 
*Feta  or dairy free alternatives will  work in place of goat cheese.
