Why Make Slow Cooker Chicken Tacos
I can think of so many reasons to make these tacos, trust me they will be on rotation often in your household.
- Easy. Just dump everything in the low cooker and wait for the magic to happen.
- Customize. Use any salsa flavor of choice! and add any veggies.
- Healthy. Made with feel good, nutritious ingredients.
- Meal Prep Friendly. Just like my Taco Rice Bowls, this dish gets better and better throughout the week.
Ingredient Notes

All other ingredients and measurements can be found in the recipe card towards the bottom of this post.
- Chicken Breasts. Boneless and skinless will work best. You can also use chicken thighs.
- Seasoning. I make my own taco seasoning with; pepper, salt, cumin, paprika, garlic powder, onion powder and cayenne.
- Salsa. I use a chunky red salsa but you can use ANY salsa. Pineapple salsa, green salsa and so on.
- Tomato Paste. This thickens up the sauce.
- Chipotle Peppers In Adobo. This really gives the sauce a nice kick of flavor!
- Bell Peppers. This will be in the slow cooker with the chicken.
- Onions. This is for topping.
- Tortillas. Use flour or corn!
Recipe Variations
- Add onions to the crockpot if you want an extra flavor burst.
- Add canned beans to the crockpot if you’d like!
- Serve rice and beans on the tacos to make them more filling.
Steps To Make Slow Cooker Chicken Tacos

- Step One. Add everything to the slow cooker, starting with the chicken on the bottom (Photo 1) .
- Step Two. Cook everything on high for 3 hours. Be sure to check the chicken with a digital thermometer to prevent overcooking the chicken.
- Step Three. Shred the chicken well and place it back into the slow cooker (Photo 2-3).
- Step Four. Assemble the tacos and add all your favorite toppings.

- Char the tortillas before serving! I just place them on my gas stove burner and turn the flame on low, flip them often until they get little “charred” spots on them – it’s SO good!
- Pick your favorite toppings! Pickled onions, jalapeños, sour cream, guac, anything you love on a taco will be delicious on these.

Slow Cooker Chicken Tacos
- 2 lbs chicken breasts, boneless & skinless
- 1 tsp garlic powder
- ½ tsp salt
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp onion powder
- 1¼ cup salsa , any flavor salsa of choice!
- 1½ Tbsp tomato paste
- 1-2 Tbsp Chipotle peppers in adobo , *the more you add the spicer it will be!
- 1 bell pepper, chopped
- 1 Jalapeño, seeded and chopped , *optional!
- 8-10 tortillas , fajita sized
- thinly sliced red onion
- shredded cheese
Instructions
- Add everything to the slow cooker, starting with the chicken on the bottom. Be sure to mix the seasonings together before adding over the chicken in the slow cooker. Pour salsa, paste and chipotle in and top with the chopped peppers.
- Cover the slow cooker and cook on high for 3 hours. If cooking on low, cook for 4 hours. Be sure to check the chicken with a digital thermometer to prevent overcooking the chicken.
- Once chicken is cooked through, pull it out and place on a cutting board. Shred the chicken well with two forks and place it back into the slow cooker with the sauce. Mix everything up again to bring the chicken back to heat.
- Assemble the tacos and add all your favorite toppings (shredded cheese, onions, sour cream, avocado, cilantro whatever you like!)
