Fire Roasted Tomatoes give a deep savory flavor for sauces, dips and breads. Easy to make and truly addictive. Never buy the store-bought cans again! Make in the oven, over the grill or the air fryer. A great way to use up tomatoes and capture their fresh seasonal flavors by a slow roast.

Why Make Fire Roasted Tomatoes

If you haven’t had fire roasted tomatoes, you are in for a treat. They have a deep savory flavor that is irresistible. I like to add them to red sauce dishes like my Ground Turkey Meatballs or Baked Spaghetti Meatballs. It elevates a red sauce to a whole new level.

  • Easy to Make.
  • Versatile. It goes with several dishes or use it as a dip or topping to baguette.
  • Meal Prep Friendly. You can jar these for the fridge, or can them for the winter to come.

  • Tomatoes. Use whatever you love that’s in season. Roma or vine ripe tomatoes will work best.
  • Seasonings. salt, pepper, dried oregano, dried basil.
  • Olive Oil. A high quality neutral flavored olive oil works great.

Recipe Variations

  • Make these tomatoes more of a Mexican style flavor, use paprika, cayenne pepper and dried cilantro in stead of the Italian seasonings listed above.

Steps To Make Fire Roasted Tomatoes

This recipe comes together in just a few simple steps. Pick your cooking method and lets get it going.

Step One. If using the oven, preheat to 400º. Otherwise slice the tomatoes into 3rds or 4ths whatever fits best and works best for the tomato shape. Line them up in an even layer on a grill rack. If baking them, line them on a parchment lined baking sheet.

Step Two. Drizzle the tomatoes generously with olive oil and season well.

If baking in the oven, bake for about 15 minutes or until the edges of the tomatoes start to lightly char (Photo 2). For the air fryer; cook on 375º for 10-12 minutes. If cooking on the grill; set the grill to medium heat. Place the grill basket with tomatoes on the grill and cook for about 10 minutes or until the tomatoes char a bit on the edges.

Step Three. Once the tomatoes are softened and lightly charred, set them aside and let them cool. You can then jar them or give them a quick chop and then jar them so they are easier to blend into recipes.

This recipe will keep in the fridge for up to 5 days. You can also freeze them for up to 3 months, use when needed to make soups, salsas and more.

How can I make fire roasted tomatoes smooth for sauce or soup?

You can easily make this more of a soup texture. Just pull the skins off after the roast and blend them gently in a high speed blender.

  • 1 Tbsp olive oil , *more as needed
  • ½ tsp salt, *more as needed
  • ½ tsp black pepper
  • ½ tsp dried oregano
