You’ll love every bite of this air fryer zucchini recipe. It’s extra crispy on the outside while moist and cooked to perfection in the center. They are best on their own while warm and fresh, or you can dip them in your favorite sauce. I made them gluten-free, but you can also substitute the ingredients for regular flour and breadcrumbs.

Ingredient Notes
- Fresh zucchini. You can also use a yellow summer squash if needed. You will need about 2 medium sized zucchinis.
- Bread crumbs. You can also use gluten free bread crumbs or panko bread crumbs in place.
- Parmesan cheese. This helps to crisp up the fries and offers a great flavor.
- Seasonings. You will need garlic powder, salt, paprika, and onion powder. You can also add Italian seasoning.
- Cornstarch. To help crisp up the fries.
- Eggs. For an egg wash and to get the coating to stick.
- Dipping sauce. For the optional dipping sauce, use my homemade Lemon Honey Tahini. It also pairs well with my spicy honey mustard.
Steps To Make Zucchini Fries
Step one. Get two medium-sized bowls out. Whisk egg wash in one. In the second bowl, add seasoning, and breadcrumbs and whisk together well.
Step two. Slice zucchini into “fries” of equal size so they cook evenly. See the above photo for size reference. I like to cut them in half and then cut each half into fourths or thinner. Sprinkle them with corn starch and mix well.
Step three. Line your air fryer basket with parchment to help prevent the batter from sticking. Dip one fry at a time into the egg wash, then into the breading for a crispy coating. Lay them close together but don’t overcrowd your air fryer. Once all the zucchini sticks are laid out flat on a single layer in the air fryer, spritz with oil, sprinkle with cheese.
Step four. Place zucchini fries in the air fryer at 350º for about 12-18 minutes. Cooking time may vary depending on the type of air fryer you have. If you have a small cylinder air fryer, you need to bake it in two batches.
