    Dairy-Free Blueberry Banana Bread

    This banana bread has a ton of flavor, a little crunch and it's a crowd pleaser for all ages (kids too!). Option to add granola for a pop of flavor.

    This recipe is from my mom's book. She’s been baking it the same way for years and she has mastered it. I remember the house smelling amazing every time. I of course have made some of my own adjustments to the bread over the years, but the original will always be my favorite.

    Why Make This Blueberry Banana Bread

    This bread is easy to make and perfect for breakfast.

    This blueberry banana bread is dairy-free. This is a great recipe to have kids help with.

    Blueberry banana bread is perfect for any occasion and customizable.

    Banana bread is one of my all time favorite breakfast treats. I have been making this recipe for years and it always turns out cozy and delicious.

    Ingredients For Blueberry Banana Bread.

    Bananas. This recipe calls for 3 over ripe bananas. I always buy extra bananas to have on hand to bake with.

    Blueberries. Fresh or frozen will work great for this recipe. I typically use fresh because they add a different level of moist-ness to the bread however frozen is great!

    Eggs. You will need 2 eggs, room temperature. I typically pull the eggs out and leave them on a towel for a few hours. otherwise you can gently hold the egg in your hands for a bit to take the chill out.

    Granola. This is an optional mix-in! It's my favorite mix-in but this bread is so delicious without granola as well. I like to use any granola I have on hand or I just make my own with this recipe here

    Coconut oil. Or butter - your choice. I try to make as many things as I can dairy free so I often use coconut oil in my baking to do so.

    Flour. You can use all purpose gluten free or regular powder for this recipe! If you'd like to make your own gluten free all purpose flour, I highly recommend reading up on how to measure for substitutions.

    How To Make This Blueberry Banana Bread.

    Step 1. Separate dry ingredients with your wet ingredients. Make sure you mash up the banana.

    Step 2. Mix the dry ingredients into the wet. Make sure you do not over mix! I like to use a thick spatula and run it along the bottom of the bowl and turn the ingredients together. Add into a bread loaf pan and bake on 350 for 40 - 55 minutes. Oven temps vary so check with a toothpick and keep a close eye.

    FAQs And Tips.

    Can I use frozen blueberries?

    yes, they will work great.

    My banana are't ripe enough.

    That's okay. Just try to get them as soft as possible and mash well with a fork.

    Can I use different oil?

    Yes, olive oil avocado or canola oil will work in this recipe.

    • bread pan

    Ingredients

    • 1 ½ cup all purpose flour
    • ⅔ cup coconut sugar
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp cinnamon
    • ½ tsp nutmeg
    • 3 over ripe bananas
    • ⅓ cup melted coconut oil or butter
    • 2 eggs room temp
    • 1 tsp vanilla extract
    • 1 cup granola optional!
    • 1 cup blueberries  Fresh or frozen!

    Instructions

    • Mix all the dry ingredients into a large bowl whisk together and get clumps out. Mix all wet ingredients together in a separate bowl and lightly and pour into dry ingredients. Mix together well.
    • Bake at 350º in a loaf pan for 55 min or until cooked all the way through.

    Notes

    *frozen blueberries will work as well
    *any neutral oil will work: avocado, olive oil.
