Cottage Cheese and Scrambled Eggs are one of my favorite ways to add extra protein to breakfast without making it feel like a high-protein recipe. The cottage cheese melts right into the eggs as they cook, creating scrambled eggs that are softer, creamier, and more satisfying. Best of all, you don’t really taste the cottage cheese, it simply makes the eggs richer and fluffier.

Why Make Cottage Cheese with Scrambled Eggs?

One of my favorite ways to make scrambled eggs is by adding a scoop of cottage cheese. It melts right into the eggs as they cook, making them extra creamy while adding a boost of protein. Since cottage cheese has such a mild flavor, you don’t really notice it’s there. You’ll just have softer, fluffier eggs that keep you full longer.

Here’s a few reasons I keep coming back to this creamy scrambled eggs recipe:

  • Keeps you full longer. The added protein makes this breakfast more filling than plain scrambled eggs.

Cottage Cheese vs Milk in Scrambled Eggs

Milk has traditionally been added to scrambled eggs to create a softer texture, but I find that cottage cheese works even better. It adds a creaminess similar to milk while also boosting the protein and making the eggs more filling.

Another benefit is that the cottage cheese melts into the eggs, creating a fluffy texture without making them watery. Since cottage cheese is mild in flavor, you don’t end up with eggs that taste like cottage cheese, just creamier scrambled eggs with more protein.

Just some quick notes about a few ingredients to ensure the best scrambled eggs with cottage cheese!

  • Cottage Cheese: I prefer full-fat cottage cheese because it melts more smoothly into the eggs and creates the creamiest texture. Don’t worry about the curds, they melt right in as they cook.
  • Seasonings: I keep the seasonings simple with salt, pepper, dried chives, and garlic powder, but you can easily customize them to your taste.

How to Make Cottage Cheese Scrambled Eggs

This high-protein breakfast comes together in just a few minutes. The cottage cheese melts into the eggs as they cook, creating a rich, creamy texture without overpowering the flavor.

  1. Whisk the ingredients: In a large mixing bowl, add the eggs, cottage cheese and seasonings. Whisk well.
  2. Heat the pan: Grab a non-stick skillet, add the butter or oil and heat to medium-low heat (careful not to make the pan too hot!) Slowly pour the egg mix into the skillet.
  3. Scramble the eggs. Using a rubber spatula (or any spatula) slowly stir the eggs to allow them to evenly cook throughout to your liking. I like my eggs medium which is about 5-6 minutes.
  4. Serve. Take the eggs off the heat and serve immediately. Garnish with chopped green onions.

EXPERT TIP: The biggest mistake people make is cooking eggs over heat that’s too high. Low to medium-low heat creates the softest, creamiest texture

The Best Cottage Cheese to Use

The good news is that almost any cottage cheese will work in this recipe. Since the cottage cheese melts into the eggs as they cook, you don’t need a specific brand or style to get great results. Both small curd and large curd cottage cheese can be used.

I prefer to use full-fat cottage cheese because it creates the creamiest texture and richest flavor. But if you’re looking for a higher-protein or lower-fat option, low-fat cottage cheese works too.

Ways to Serve Them

These cottage cheese scrambled eggs are filling enough to build an entire breakfast around them. I love serving them with fresh fruit, breakfast potatoes, sautéed vegetables, bacon, or sausage for a meal that keeps me satisfied for hours.

Storage and Reheating

While these eggs are best enjoyed fresh, they do make a great meal-prep breakfast for busy mornings.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

For the best texture, avoid overheating the eggs. Warm gently in the microwave in 15-20 second intervals or in a skillet over low heat.

Ingredients 

  • 4-6 eggs, * I use 6 typically
  • ¼ cup full fat cottage cheese , *feel free to use 1-2 Tbsp extra if desired
  • ¼ tsp salt & pepper, *any other seasonings you like ( garlic powder dried chives )
  • ½ Tbsp butter, *or olive oil
  • 2 green onions sliced, optional for garnish

Instructions 

  • In a large mixing bowl, add the eggs, cottage cheese and seasonings. Whisk well. 
  • Grab a non-stick skillet, add the butter or oil and heat to medium-low heat (careful not to make the pan too hot!) Slowly pour the egg mix into the skillet.
