- Hot Honey. Hot honey gives the beef its signature sweet-and-spicy flavor without needing a complicated sauce. I usually use Mike’s Hot Honey or my homemade hot honey.

- Cottage Cheese. Cottage cheese adds creaminess while balancing the heat from the beef. Full-fat and low-fat both work, so use your favorite.
- Cucumbers. Thinly sliced cucumbers add a cool, crisp bite that keeps the bowls from feeling too rich or heavy. If you want to swap for another veggie, roasted broccoli, brussels sprouts, or shredded cabbage all work well.

How to Make Hot Honey Ground Beef Sweet Potato Bowls
- Cook the potatoes: Preheat the oven to 400°F. Spread the sweet potato cubes across a large baking sheet, drizzle with olive oil, and then toss with the garlic powder, paprika, salt, and pepper. Roast the sweet potatoes for 30 minutes, flipping halfway through. They are done when you can easily pierce them with a fork. (Or air fry at 375°F for 12 to 15 minutes.)
- While the sweet potatoes roast, cook the ground beef in a large skillet over medium-high heat with the diced onion, garlic powder, thyme, salt, and pepper until no pink remains. Add in the balsamic vinegar and the hot honey. Let the beef sit untouched for 1 to 2 minutes to crisp up.
- Assemble the bowls: Divide the warm sweet potatoes, ground beef, cottage cheese, avocado, and cucumbers between bowls, then finish each one with a generous drizzle of hot honey.

My Best Tips for These Bowls
- Don’t rush the last two minutes. Once you stir in the hot honey and balsamic, let the beef cook undisturbed for another minute or two. Those crispy, caramelized bits are my favorite part of the whole bowl.
- Save a little hot honey for the end. I like stirring some into the beef, then finishing the bowls with another generous drizzle right before serving. It ties all of the flavors together.
- Enjoy the contrast of warm and cool ingredients. I think these bowls are best when the beef and sweet potatoes are still warm while the cottage cheese, cucumbers, and avocado stay cool.
- Taste before serving. Depending on how spicy your hot honey is, you may want another pinch of salt or an extra drizzle of hot honey to make the flavors pop.

These Hot Honey Ground Beef Bowls are great for meal prep because most of the components hold up really well in the refrigerator.
For the freshest bowls, store the cooked beef, roasted sweet potatoes, cottage cheese, cucumbers, and avocado in separate containers. Reheat just the beef and sweet potatoes, then assemble the bowls with the cold ingredients and finish with a fresh drizzle of hot honey.
Store the beef and sweet potatoes in airtight containers in the refrigerator for up to 4 days. I recommend slicing the avocado just before serving so it stays fresh, and adding an extra drizzle of hot honey after reheating to brighten the flavors.

For the potatoes:
- 4 cups cubed sweet potatoes, (about one large sweet potato)
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt, (more as needed)
- 1/4 teaspoon freshly ground black pepper
For the beef:
- 1 pound ground beef
- 1/4 small yellow onion, finely diced
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1/4 teaspoon salt, (use more as needed)
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 2 tablespoons hot honey
For the bowls:
- 2 cups cottage cheese
- 2 small cucumbers, thinly sliced
- 1 large avocado, sliced
- 5-6 tablespoons hot honey
Instructions
- Cook the potatoes: Preheat the oven to 400°F or preheat the air fryer to 375°F. Add the cubed sweet potatoes to a large baking sheet, spray or drizzle with oil, then toss with garlic powder, paprika, salt, and pepper.
- Roast the sweet potatoes for 30 minutes, flipping halfway through, until you can easily pierce the potatoes with a fork. If cooking in the air fryer, cook for about 12-15 minutes.
- While the potatoes are baking, brown the beef: Heat a large skillet over medium-high heat. Add the ground beef, diced onions, thyme, garlic powder, salt, and pepper. Cook until the beef is browned, then add the balsamic vinegar and hot honey. Let the beef sit untouched for 1-2 minutes to crisp up. Remove from heat.
- Assemble bowls: Divide the cooked ground beef, sweet potatoes, and cottage cheese between bowls. Top with avocado slices, sliced cucumbers, and a heavy drizzle of hot honey. Enjoy!
