Hot Honey Ground Beef Bowls

Hot Honey Ground Beef bowls combine caramelized hot honey beef, roasted sweet potatoes, creamy cottage cheese, avocado, and crisp cucumbers for the perfect balance of sweet, spicy, creamy, and fresh flavors. They're an easy weeknight dinner that's just as good for meal prep as it is fresh from the kitchen.

Ingredients

For the potatoes:

  • 4 cups cubed sweet potatoes (about one large sweet potato)
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt (more as needed)
  • 1/4 teaspoon freshly ground black pepper

For the beef:

  • 1 pound ground beef
  • 1/4 small yellow onion finely diced
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt (use more as needed)
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons hot honey

For the bowls:

  • 2 cups cottage cheese
  • 2 small cucumbers thinly sliced
  • 1 large avocado sliced
  • 5-6 tablespoons hot honey

Instructions

  • Cook the potatoes: Preheat the oven to 400°F or preheat the air fryer to 375°F. Add the cubed sweet potatoes to a large baking sheet, spray or drizzle with oil, then toss with garlic powder, paprika, salt, and pepper.
  • Roast the sweet potatoes for 30 minutes, flipping halfway through, until you can easily pierce the potatoes with a fork. If cooking in the air fryer, cook for about 12-15 minutes.
  • While the potatoes are baking, brown the beef: Heat a large skillet over medium-high heat. Add the ground beef, diced onions, thyme, garlic powder, salt, and pepper. Cook until the beef is browned, then add the balsamic vinegar and hot honey. Let the beef sit untouched for 1-2 minutes to crisp up. Remove from heat.
  • Assemble bowls: Divide the cooked ground beef, sweet potatoes, and cottage cheese between bowls. Top with avocado slices, sliced cucumbers, and a heavy drizzle of hot honey. Enjoy!

Notes

  • Let the beef cook undisturbed for 1–2 minutes after adding the hot honey and balsamic so it develops crispy, caramelized edges.
  • Roast the sweet potatoes until they're lightly browned around the edges and tender in the center.
  • Serve the bowls with warm beef and sweet potatoes, but cold cottage cheese, cucumbers, and avocado for the best contrast.
  • Finish each bowl with an extra drizzle of hot honey just before serving.
