- 4-6 eggs * I use 6 typically
- ¼ cup full fat cottage cheese *feel free to use 1-2 Tbsp extra if desired
- ¼ tsp salt & pepper *any other seasonings you like ( garlic powder dried chives )
- ½ Tbsp butter *or olive oil
- 2 green onions sliced optional for garnish
In a large mixing bowl, add the eggs, cottage cheese and seasonings. Whisk well.
Grab a non-stick skillet, add the butter or oil and heat to medium heat (careful not to make the pan too hot!) Slowly pour the egg mix into the skillet.
Using a rubber spatula (or any spatula) slowly stir the eggs to allow them to evenly cook throughout to your liking. I like my eggs medium which is about 5-6 minutes.
Take the eggs off the heat and serve immediately. Garnish with chopped green onions.
