Every bite has a bit of everything, from sweet roasted corn and salty cotija cheese to creamy avocado and a squeeze of fresh lime. The colorful toppings make every bowl feel different, which is why it’s just as perfect for meal prep as it is for feeding a crowd.

Some dinners are good enough to make once. This is one of those recipes I find myself craving again after a few days. The smoky chicken and creamy street corn balance each other perfectly, while the fresh toppings keep every bite from feeling too heavy.

I love how every bite has something different. It’s colorful, filling, and easy to customize. If you love Mexican street corn, there’s a good chance this recipe is about to become a regular in your dinner rotation. The street corn is honestly so good that I’ve caught myself eating it straight from the bowl while the chicken rests.

Ingredient Notes

  • Chicken Breasts. I love boneless, skinless chicken breasts here because they stay juicy with the homemade seasoning blend, but boneless chicken thighs are just as delicious if you prefer dark meat.
  • Seasonings. The same blend of smoky, savory spices flavors both the chicken and the creamy street corn, so every bite ties together.
  • Limes. You’ll use fresh lime juice in the street corn mixture and serve extra wedges alongside the bowls. A squeeze of lime at the end really brightens all the flavors.
  • Mayonnaise & Sour Cream. I like using a combination of both for the creamiest street corn. Mexican crema is a great substitute if you have it.
  • Hot Sauce. I usually reach for Cholula Hot sauce because it adds flavor without overwhelming heat, but use your favorite hot sauce or leave it out if you are feeding littles or anyone who wants a milder meal.
  • Corn. Fresh corn on the cob gives the best flavor and texture, especially during summer. If fresh corn isn’t in season, frozen corn works well too, just cook it in a hot skillet until lightly browned to mimic that roasted flavor.
  • Rice. Fluffy white rice is my go-to, but cilantro lime rice, brown rice, or even cauliflower rice all work well if you want to switch things up. You can use microwave rice or prep rice ahead of time to save time.
  • Cotija cheese. Cotija adds a salty finish that’s classic in Mexican street corn. If you can’t find it, feta is the closest substitute.
  • Toppings. Avocado, red onion, and cilantro are my favorite finishing touches. I also add jalapeño to mine but you can skip it! Set everything out and let everyone build their own bowl. It makes dinner more fun and everyone gets exactly what they like.

How to Make Street Corn Chicken Rice Bowls

  1. Season and cook the chicken. Coat the chicken breasts evenly with the seasoning blend. Heat a little oil in a large skillet over medium-high heat and cook for 7-9 minutes per side, or until the temperature reaches 165ºF. Transfer the chicken to a cutting board and let it rest while you finish the bowls.
  2. Cook the rice. While the chicken cooks, prepare the rice according to the package instructions. This typically takes about 20 minutes for cooking time. Once it’s finished, stir in the chopped cilantro and fluff with a fork.
  3. Cook the corn. Bring a large pot of water to a simmer, then add the shucked corn and cook for 4-6 minutes until tender. Once it’s cooled enough to handle, char it on a grill or directly over a gas flame for a few minutes, turning occasionally, until lightly blackened. The charring is optional but adds a delicious smoky flavor!
  4. Make the street corn. In a medium bowl, whisk together the mayonnaise, sour cream (or crema), seasonings, lime juice, and hot sauce. Slice the kernels off the cobs, stir them into the dressing, and taste before adding more lime, salt, or hot sauce if needed.
  5. Assemble the bowls. Slice the rested chicken, then layer rice, chicken, and a generous scoop of the street corn into bowls. Finish with avocado, red onion, jalapeños, extra cotija, cilantro, and plenty of fresh lime.

Build Your Perfect Bowl

One of my favorite things about these Street Corn Chicken Bowls is that no two bowls have to be the same. I usually start with fluffy white rice, chicken, and a generous scoop of the creamy street corn, then finish mine with avocado, jalapeños, fresh cilantro, and an extra squeeze of lime.

If you ask me, don’t skip the avocado or the fresh lime. The creamy avocado balances the smoky seasonings, and that final squeeze of lime brights everything up. If I’m feeling extra hungry, I’ll even add black beans or a handful of crushed tortilla chips for a little extra crunch.

If you’re serving these for family or friends, set all of the toppings out buffet-style and let everyone build their own bowl. It’s an easy way to make dinner feel more fun, and everyone gets exactly what they want.

A Few Tips Before You Get Started

  • Fresh corn is worth it when it’s in season. It has the sweetest flavor and the best texture, but frozen corn is a great shortcut. Just cook it in a hot skillet until lightly browned to mimic that roasted flavor.
  • Taste the street corn before serving. Depending on how juicy your limes are, you may want an extra squeeze of lime, another spoonful of mayo for a creamier dressing, or a pinch more salt.
  • Let the chicken rest before slicing. Giving it five minutes to rest keeps the juices in the chicken instead of on your cutting board.
  • Keep the toppings separate for meal prep. Store the avocado and lime wedges separately and add them just before serving so everything stays fresh.
  • Make it kid-friendly. Leave the hot sauce and jalapeños out of the street corn, then let everyone add their own spice at the table.

Storage and Make Ahead

Store leftover chicken, rice, and street corn in an airtight container in the refrigerator for up to 4 days. For the freshest leftovers, store sliced avocado separately and add it just before serving. You can freeze the chicken and rice for up to 2 months.

Street Corn Chicken Rice Bowls

Equipment

Ingredients 

Seasoned Chicken

  • 1-1½ lbs chicken breasts , boneless and skinless
  • ½ teaspoon each salt & pepper, more as needed
  • teaspoon garlic powder
  • teaspoon smoked paprika
  • teaspoon chili powder

Mexican Street Corn

  • 3 corn on the cobs, about 2 ½ cups of kernels
  • ¼ cup sour cream , or mexican crema
  • ¼ cup mayonnaise
  • 1 lime, squeezed , about 1 tablespoon of juice
  • ¼ teaspoon each salt & pepper
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon chili powder
  • 1-2 tablespoons hot sauce, I use Cholula

Rice Bowls

  • 1 cup rice, uncooked
  • ¼ bunch fresh cilantro, chopped
  • 1 jalapeno, diced
  • ¼ red onion, diced
  • ¼ cotija, crumbled
  • 1 avocado, sliced

Instructions 

  • Season & cook the chicken breasts. Mimx the seasonings and coat both sides well. Add the breasts to an oiled skillet over medium/high heat and sauté for about 7-9 minutes on each side, turning often until they reach 165º internally.
  • Make the rice while the chicken is cooking, follow according to the package. This typically takes about 20 minutes for cooking time.
  • Blanch the corn. While everything is cooking, bring a large pot of water (only halfway filled) to a simmer, clean, peel the corn and add to the hot water. Let it steam for just 4-6 minutes and take it out. Place to the side on a plate.
  • Char the corn. When it's cool enough to handle, add the corn to a grill to char for just a few minutes or just do it on a gas stovetop, turn it often until you have a nice char. This is optional!
  • Make The Mexican Street Corn mix. In a medium bowl, add the mayo, seasonings, sour cream or crema, lime and hot sauce. Whisk, taste, adjust anything if desired. Set aside.
  • Cut the kernels of the cob. Add to the dressing above in the bowl, mix well and set aside.
  • Add cilantro to the rice when it's done cooking, fluff it.
  • When the chicken is done resting, slice it up and assemble the street corn rice bowls!

Notes

  • Use in season corn when you can for the best texture and flavor.
  • Taste as you go, you can add more mayo to the Mexican street corn dressing if you want it less tangy!
  • Feel free to skip the hot sauce if you need to feed little mouths or picky eaters!
  • Store leftovers in an airtight container in the fridge for up to 4 days. You can freeze these for up to 2 months.
