Why Make This Broccoli Apple Salad

This salad will please the taste bug with the bite of flavor from Silver Springs Non-GMO Prepared Horseradish You can use the regular or hot depending on your heat preference. This slaw is perfect for late summer/fall when apples are coming into season. You can choose any apple of choice.

I prefer gala apples for extra color but green apples will also work. This slaw isn’t too spicy, its the perfect balance of sweet with an interesting bite from the horseradish. These flavors are so unique together.

In case you didn’t know, prepared horseradish is a condiment made from the white root of the horseradish plant. The root is in the same family as mustard and wasabi.

I prefer to prepare my herbed baked salmon with this slaw, but chicken, shrimp or steak will be wonderful as the main to this side. Feel free to pair the slaw with anything but I have included the salmon in the recipe below with a side of green veggies.

Ingredients Needed

Silver Springs Prepared Horseradish. This adds the perfect “bite” to the dish, it pairs beautifully with the sweetness from the apple. Find where to buy it here.

Mayo. You can also use plain greek yogurt.

Apples. I use Gala apples but please use whats available and preferred.

Broccoli Slaw. This is usually always in the produce/refrigerated section and comes in a bag prepared at most all grocery stores.

Red Onion.

Apple Cider Vinegar.

Lemon. The zest and a little juice!

Sugar. Just a little bit for this recipe to bring all the creamy flavors together.

Seasoning. Chipotle, paprika, salt, pepper, oregano (some will be for the salmon)

Salmon Filets.

Oil. Olive oil for the salmon.

Veggies. Broccoli, green beans, cauliflower whatever you prefer.

Steps To Make This Recipe

Step One. Set oven to 375º. Rinse salmon and pat it dry with a paper towel. In a small bowl, whisk olive oil and seasonings. In a baking dish, add salmon filets and rub over salmon with oil/seasoning mixture. Place in the oven and bake for 15-20 minutes. Oven temps and salmon thickness vary so please keep an eye on the salmon for preferred doneness. I like my salmon medium well.

Step Two. While salmon if cooking prepare slaw and steamed veggies if you are making veggies. Thinly slice red onions and slice apples with a julienne slicer. You may also cut the apples into little cubes if you do not have a julienne slicer. Zest you lemon add broccoli slaw, onion, apples, zest to a large bowl. In a medium bowl, add all the dressing ingredients; mayo, horseradish, vinegar, sugar, lemon juice, seasoning whisk together well. dressing will be a bit thick, the moisture from the apples will help to thin it out when you mix.

Steamed veggies should be steamed in a basket for about 5- 10 minutes depending on the veggie you choose.

Ingredients 

Broccoli Apple Slaw

  • 1 12 oz package of broccoli slaw mix
  • 2 cup julienne-cut apple, any type
  • ¼ cup thinly sliced red onion
  • ¼ cup mayo , *see notes for substitutes
  • 2 tbsp apple cider vinegar
  • tbsp prepared horseradish
  • 2 tsp lemon zest
  • ½ tsp lemon juice, *more can be used on salmon¼
  • ¼ tsp salt
  • tsp sugar
  • 1 tsp cracked pepper
  • ½ tsp chipotle powder

Herbed Baked Salmon

  • 1 lb thawed salmon, sliced into 4 oz filets
  • tbsp olive oil
  • 1 tsp chipotle powder, *there are two measurements, one for the slaw and one for the salmon
  • 1 tsp paprika powder
  • 1 tsp dried crushed oregano
  • ¼ tsp salt
  • 1 lb steamed prepared green beans

Instructions

*plain greek yogurt, vegan mayo or sour cream will work as well. 
*use any salmon of choice. I like to use whats on sale or whatever salmon I can afford at the time however, wild caught is typically my favorite.
