Easy BBQ chicken flatbread is flavor loaded, quick and super filling for an easy weekday meal. Use rotisserie chicken or make your own. This one is always a huge hit.

Why Make BBQ Flatbread
This meal is easy peasy, you can make everything from scratch for the ULTIMATE flavor or you can cut a few corners and have it ready in a pinch for meal prep or an easy weekday meal.
This flatbread is husband approved, my hubby asks for it all the time for his lunches, we both get to enjoy a flatbread and the flavor is so addicting.
Ingredients Needed
Chicken Breasts. I use boneless, skinless chicken breasts but my BBQ Chicken Thighs will also work well. You can also use Rotisserie chicken to cut down on time for this recipe.
Seasoning. Salt, pepper, smoked paprika, dried oregano, red pepper flakes.
Barbecue Sauce. Use your favorite bbq sauce of choice. I love a high quality, lower in sugar sauce. You can also make your own BBQ Sauce. Homemade BBQ Sauce on this blog post.
Flatbread. You can find this in the bread aisle at most all major grocery stores. You can also use naan bread or lavish bread to cut calories.
Mozzarella. You can really use any cheese of choice, I just find Mozzarella to be the best with bbq chicken (and it’s nice and melty). I also use Parmesan for some extra salt, nutty goodness.

Recipe Variations
Chicken. Use rotisserie chicken if you want to speed things up with this recipe. Just skip seasonings.
BBQ Sauce. Use your favorite kind, or make you own using my recipe above.
Cheese. Manchego, cheddar, goat cheese and blue cheese are all great on this.
Flatbread. You can also use naan and lavish bread in place of the flatbread.
Bell Pepper. Use any bell pepper of choice, use Jalapeño to make it spicy o r add some sliced pineapple to make it sweet/savory.
How To Make This Recipe
Step One. If you are making your own chicken, start with patting the chicken dry and cutting any large breasts in half (to help ensure an even and quicker cook). Mix all seasonings together in a small bowl. Sprinkle them on both sides of the chicken.
Step Two. If making your own bbq sauce, get that cooked while the chicken is cooking. Add chicken to a hot, oiled skillet on medium high heat. Cook the chicken on medium heat for about 8-10 minutes each side. Chicken should be 165º internally. Once it’s done, let it rest and cool a bit. Cut into bite sized pieces and set aside. Preheat oven to 375º.
Step Three. Preheat oven to 375° on a large cooking sheet, add the flatbread or naan. Brush the flatbread generously with bbq sauce. Add minced garlic. Next, add the mozzarella followed by the chicken, onions, chopped peppers. Cook on the center rack in the oven for 10-15 minutes or until the bread is browned and cheese is melted and bubbling.
Step Four. Pull out of the oven, let it cool for a few minutes and add chopped cilantro and a few more drizzles of bbq sauce. Slice with a pizza cutter and enjoy.
Store leftovers in an airtight container in the fridge for up to 4 days, reheat in the oven, air fryer or microwave. Freeze in an airtight bag for up to 3 months.

Yes, you can use naan bread or lavish bread if you want. Naan is a little smaller that flatbread.

Made this recipe for dinner last night – 2 flats just with chicken, cheese, BBQ sauce and 2 with all the ingredients (picky eaters). Wasn’t sure if my fam would like but thankfully they did. I used rotisserie already shredded chicken, added the spices snd olive oil since it came plain, and reheated in my microwave. Served with fresh cut pineapple.
