Single serve oatmeal is easy to whip up and no overindulgence since it’s single serve (all to yourself no sharing, yes please!).

Ingredient Notes
Old Fashioned Oats. This is the base of the recipe. You can uuse gluten free old fashioned oats as well.
Banana. You can sub applesauce
Protein Powder. Optional, but recommended to help keep you full and flavor these oats!
Coconut Oil. Or you can use peanut butter.
Almond Milk. Any milk will work if you can’t have almond milk.
Baking Powder. To help keep things together and fluffy.
Chocolate Chips. Or any mix in of choice ~ dried fruit, nuts and so on.
Steps To Make
Step One. Put everything into a medium size bowl. Get the oven to temp if baking at 350º. Use a spatula or simply mix with your hands (this is what I do). Once everything is evenly mixed, form the mix into a ball/cookie shape and place it on a small piece of parchment paper.
Step Two. Bake in the air fryer on 375º for about 6 – 8 minutes. Oven for about 10-15 minutes. Let the cookie cool, it will need this time to set. Then transfer to a bowl or plate and dig in!

- Don’t overcook. Just let it get warm and browned a bit. I prefer the inside to be a bit soft.

Make Ahead & Storage Tips
Make ahead tips. You can make the batter ahead of time! Keep the dough in a glass bowl with a plastic wrap cover in the fridge until you are ready to bake or air fry. Just be sure to only let it sit for 24 hours, the banana may turn brown if you don’t cook it soon.
Storage tips. If you want to make a few of these for meal prep, just store them in an airtight container in the fridge and pop one out in the microwave when you are ready to enjoy.

Single Serve Baked Oatmeal
Equipment

Ingredients
- ½ cup old fashioned oats
- ½ mashed banana, about ¼ -⅓ cup
- 1 tsp baking powder
- ¼ cup protein powder
- 1 tbsp coconut oil, melted, peanut butter will also work
- 1 tbsp almond milk, or ny milk of choice
- 1 tbsp chocolate chips
Instructions
- Preheat the oven to 350º. Mash the banana well in a medium size bowl. Add all other ingredients.Use a spatula or mix with your hands (this is what I do). Once everything is evenly mixed, form the mix into a ball/cookie shape and place it on a small piece of parchment paper.
- Bake in the air fryer on 365º for about 5 – 7 minutes. Bake in the oven for about 10-15 minutes. Let it cool for a few minutes. it will need this time to set. Then transfer to a bowl or plate and dig in! I like a little maple syrup drizzle over mine.

You can omit the protein if needed (no need to substitute anything in place ) However, the protein adds a nice sweetness to the oatmeal since there is no sugar added – so I suggest you drizzle it with a little maple syrup after baking๐๐
Could you keep them premade in fridge or freezer then microwave in morning?
I would bake them first then freeze, and reheat when they thaw!
