Single Serve Baked Oatmeal

Nothing compares to a warm, single serve baked oatmeal cookie fresh out of the oven, or air fryer. Ready in under 10 minutes!

Equipment

Ingredients

  • ½ cup old fashioned oats
  • ½ mashed banana about ¼ -⅓ cup
  • 1 tsp baking powder
  • ¼ cup protein powder
  • 1 tbsp coconut oil, melted peanut butter will also work
  • 1 tbsp almond milk or ny milk of choice
  • 1 tbsp chocolate chips

Instructions

  • Preheat the oven to 350º. Mash the banana well in a medium size bowl. Add all other ingredients.
    Use a spatula or mix with your hands (this is what I do). Once everything is evenly mixed, form the mix into a ball/cookie shape and place it on a small piece of parchment paper. 
  • Bake in the air fryer on 365º for about 5 - 7 minutes. Bake in the oven for about 10-15 minutes. Let it cool for a few minutes. it will need this time to set. Then transfer to a bowl or plate and dig in! I like a little maple syrup drizzle over mine.

Notes

    • Mix in what you love! If you want to do fresh fruit or nuts instead, they work great!
    • Add a protein powder you love. This is what helps sweeten up the baked oats. You can skip the protein if you need.
    • Don't overcook. Just let it get warm and browned a bit. I prefer the inside to be a bit soft.
