Why Make These Easy Christmas Rice Krispies

These treats will bring a smile to your face! They are the perfect easy holiday treat to share with friends and family (or to keep for yourself!)

The buttery marshmallow based rice krispie will melt in your mouth and the light chocolate coating serves as the perfect vehicle for festive sprinkles. Ingredients Needed To Make This Recipe

Marshmallows. Mini marshmallows work best! They melt the quickest and are the easiest to stir.

Rice Krispies Cereal. Use any brand of rice cereal you desire.

White Chocolate Chips. These give a nice wintery color for the krispies.

Coconut Oil. This is to thin the chocolate and make it more spreadable. You can use any oil of choice.

All other ingredients and measurements can be found in the recipe card below. 

Recipe Variations

Marshmallows. Any size will work, the mini marshmallows do melt best but any shall do!

Coconut Oil. Use canola, olive or avocado oil in place of coconut oil if needed.

White Chocolate Chips. You can use ANY meltable chip of choice, milk chocolate, dark chocolate will also work, the sprinkles just won’t pop as much.

Steps To Make This Recipe

Steps to make rice krispies on parchment paper.

Step One. Measure out the rice cereal and set aside. In a large 4 qt or larger pot, add the butter, vanilla, and marshmallows. Cook on medium to low heat and stir often until the marshmallows melt completely.

Step Two. Once the marshmallows have melted, add in the rice cereal and stir really well. Ensuring everything is evenly coated. In an 7×7 or 8×8 inch size dish, line with parchment paper.

Step Three. Add the mix into the dish and press the mixture around to ensure it is even and level. Don’t push too hard! otherwise the treats will be hard to bite through. I find just a little pressure to even things out is perfect.

Step Four. Set the mix aside to cool and form to the dish. You can place it in the fridge for up to 30 minutes if needed.

Step Five. In a medium sized microwave safe bowl, add in white chocolate chips and oil. Microwave for 1 minute, stir mix and then microwave for another minute. Everything should be melty and smooth.

Step Six. Dip the krispies into the melted chocolate, gently shake off any excess chocolate. Place the krispies on a parchment paper and sprinkle with holiday sprinkles. Let them cool in the fridge or in a cool place, enjoy!

Can I use chocolate chips?

Yes, if you don’t like white chocolate use any chocolate chip of choice.

Can I make these ahead of time?

Absolutely! Make these ahead of time, they will last a few days and stay soft.

Recipe Tips

Don’t push your rice krispies down too tightly. This will result in harder rice krispies and they aren’t as easy to enjoy on the teeth.

Don’t let the rice krispies get too cold! This will also make them get too hard to bite through.

Avoid getting any liquid into the melted chocolate. Be sure the melted chocolate is not close to the sink or any water, this can result in the melted chips to seize and harden.

Ingredients 

  • 6 Tbsp butter
  • 1 tsp vanilla extract
  • 1 10 oz bag mini marshmallows
  • 5½ -6 cup rice krispie cereal , *less results in a softer chewier bar
  • cup white chocolate chips
  • tsp coconut oil, *see notes
  • ¼ cup holiday sprinkles of choice

*plant based butter will also work. 
*feel free to use chocolate chips if desired.

Store leftovers in an airtight container on the counter for 4 days or the fridge for 7 days.
