These remind me of those giant pink sugar cookies sold at gas stations. Only they are made from minimal, feel good ingredients versus the caloric processed ingredients gas station ones.

Why Make These Vegan Sugar Cookies

These sugar cookies are so soft and they melt in your mouth. They aren’t your average hard set sugar cookie. They are fluffy and totally gluten free. You can customize the toppings, they can be frosted or eaten as is without the frosting.

Ingredients Needed

Minimal ingredients are required for this recipe. You can substitute the maple syrup for sugar. You can also use different toppings for this recipe.

Almond Flour. The main ingredient for these Vegan Gluten Free Sugar Cookies.

Applesauce. I prefer unsweetened

Maple Syrup or Coconut Sugar. Any sugar will work but Maple syrup is by far the best flavor.

Baking Powder & Salt.

Frosting or Icing. I prefer Simple Mills Vegan Frosting. But you can use any frosting of choice. I do not make frosting from scratch for this one simple because you only need a small batch.

Sprinkles or toppings of choice!

How To Make This Recipe

This recipe is insanely easy to make. It is fool-proof and requires such little ingredients. It’s an easy one bowl recipe and cooks up in 11-12 minutes. The hardest part about making these cookies is waiting for them to completely cool before frosting and enjoying.

Vegan Gluten Free Sugar Cookies Steps. Mixture in clear bowls.

Step one. Set oven to 350º Combine almond flour, baking powder, salt, maple syrup or sugar, applesauce together in a large bowl. Use a spatula to combine. Mix the items together until everything is well mixed. This may take a little time to get the applesauce mixed with the almond flour but it will mix!

Step two. On a parchment lined cookie sheet, separate dough into six, 2-inch sized cookies. They need about 1.5 inch between them. Bake for about 11-12 minutes. Let them completely cool and solidify a bit before frosting. Be sure to gently handle them when frosting. Sprinkle with toppings. Enjoy or keep in the fridge in a sealed container.

Can I use sugar instead of maple syrup?

Yes, white granulated sugar or coconut sugar will work great.

Do I have to use frosting?

No, you can skip it or use icing. I prefer the frosting.

How long will these last?

They will last in a sealed container in the fridge for up to 4 days. In the freezer for up to 1 month.

Ingredients 

  • 2 cup almond flour , almond meal
  • ¼ cup maple syrup
  • ½ tsp baking powder
  • ¼ cup applesauce, *
  • 1 cup frosting , *

Instructions 

  • Set oven to 350º Combine almond flour, baking powder, salt, maple syrup or sugar, applesauce together in a large bowl. Use a spatula to combine. Mix the items together until everything is well mixed. This may take a little time to get the applesauce mixed with the almond flour but it will mix!
  • On a parchment lined cookie sheet, separate dough into six, 2-inch sized blls. Gently press them down a little ( I like to keep them large/ball shaped for more fluff. They need about 1.5 inch between each other. Bake for about 11 – 12 minutes or until the top is crackled and slightly browned.
    Let them completely cool before frosting, almond flour needs to always set longer than other flours when baking! Be sure to gently handle them when frosting. Enjoy right away or keep refrrefrigerated in a sealed container.

*I use store bought for this since it’s such a small batch needed. You can also use my 2- ingredient icing (1 cup powdered sugar + 2 tsp of almond milk)
