If you have spotty bananas around, this vegan banana cake is the perfect quick recipe to feed your family. It is such a heavenly treat. Depending on how you ice it, it works great as a sheet pan style birthday cake as well! It is so fluffy and moist non one will ever know that it is completely vegan.

Why Make This Vegan Banana Cake.

Well, as mentioned before, it is moist and fluffy! It is easy to whip up and it is completely plant based. We use chia seeds in place of eggs. You can also use ground flax seeds as well. This vegan banana cake uses almond milk and vegan butter, giving it a great texture. The crushed walnuts take it over the top with the perfect texture added to each bite. Don’t sleep on this one if you have some extra bananas around the house.

Ingredients Needed

All the vegan banana cake ingredients on a board.

Bananas. You will need 3 bananas, preferably spotty but you can use less ripe if thats all you have. Just be sure to mash them with your fingers before peeling and mashing again with a fork.

Flour. All purpose flour will work. You may also use GF All purpose if needed.

Almond Milk. I go for unsweetened.

Apple Cider Vinegar (ACV). This helps to react with the milk and fluff the cake as a buttermilk would.

Walnuts. Raw, crushed. This is optional but I highly recommend it for the ultimate texture.

Chia seed or ground flax. This is our egg replacer! We will add this directly to the milk vs soaking it prior.

Baking Powder & Baking soda. We will need both in this recipe. Please be sure they aren’t stale or old as this can ruin the recipe!

White granulated sugar and brown sugar. You will need both to get the perfect texture! If you’d like to cut back on calories sugar free options will work great. Just read packaging to know how to substitute. I like to use Truvia

Vegan Butter. I like to use the sticks as it is best for measuring. This needs to be room temperature and softened, but not melted! If you need to soften it in a jiffy, place it in your waist band for a few minutes. It works like a charm.

Cinnamon. you can also use a small dash of nutmeg with the cinnamon if you want it to taste similar to banana bread.

Vanilla Extract.

Steps To Make

Steps to make vegan banana cake.

Step one. Preheat oven to 350. Measure out the flour, baking powder, soda, walnuts and cinnamon. add to a medium bowl and whisk together to separate any clumps.

Step two. In another medium bowl, add and mix milk, vinegar and chia seeds. Let it sit for about 2 minutes. Add in vanilla extract and whisk again.

Step three. In a small bowl, mash up the bananas with a fork. In a large bowl, add sugar and room temperature softened butter. Be sure that the butter isn’t melted. We want the butter and sugar to cream together well. I like to do this step in my stand mixer but you can also use a hand mixer here to cream the butter and sugar together.

Step four. Add the milk mixture into the butter and sugar cream. Next, slowly add in the flour. Mix on low with the hand mixer, stand mixer or by hand. Continue to add in the flour until it’s all well combined. Do not over mix, but make sure there are no clumps. Add to a 9x 13 inch baking dish. This is a sheet cake style cake.

Step five. Bake on 350 for about 40 – 45 minutes or until a toothpick comes out clean from the center of the cake. Once cake has finished, let it cool completely before frosting with your favorite vegan frosting. You may also refrigerate the cake to cool it down quicker if you are short on time.

  • 2 cups almond milk
  • 2 tbsp apple cider vinegar
  • 2 tbsp vanilla extract
  • 3 cups all purpose flour
  • tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • ½ cup crushed walnuts
  • ½ cup brown sugar
  • ¾ cup white sugar
  • ¾ cup vegan butter
  • cup vegan frosting of choice , *

    This was so good I did the two ingredient icing that was shown on Instagram with a little maple syrup and my husband and I ate half the cake almost in two days very easy to make as well
