Caramel and apple just work so well together. This cake is light and airy on it’s own but once you spread some caramel over the top you will be surprised by how different and decadent it is. You can make this a single layer or double layer cake. It is a huge hit for special occasions.

Why Make This Caramel Apple Cake.

This cake is easy, and totally plant based! You won’t miss the dairy in this recipe.

This cake is full of unexpected flavors and much more exciting than your average vanilla cake.

You can make this cake a layer cake to really impress your family. Just double the batch and use two cake pans.

You can have this cake for breakfast if you’d like to skip the caramel, it is lightly sweetened and pairs with coffee.

Ingredients Needed

Apple cake ingredients.

Applesauce. This is a main component. I use unsweetened apple sauce.

Apple. This is optional! I grate a little apple into the mix for extra taste, but you can skip this!

Caramel. I use a vegan option typically found online or at specialty stores. You can use your favorite kind. This is optional for the icing over the cake. You can also melt dairy free Cocomels in a double boiler and use this.

Sugar. White sugar or coconut sugar works great.

Oat Milk. I use Silk Oat Oat milk beverage in this recipe. It offers a creamy thick liquid to the batter and really fluffs the apple cake up. It is also a great substitute should you make your own vegan caramel in the future. If you haven’t tried Silk Oat You should add it to your next grocery list.

Apple Cider Vinegar. Often used in vegan recipes to replace buttermilk or dairy reactions to baking. Don’t skip this ingredient! It also adds apple flavor.

Olive Oil. Any neutral oil will work in this recipe. Coconut oil or canola is also fine.

All Purpose Flour. All Purpose gluten free flour will also work.

How To Make This Recipe

Steps to make this apple cake.

Step one. Set oven to 350 degrees. Add all the dry ingredients into a medium sized bowl. Flour, sugar, salt, cinnamon, baking soda.

Step two. Add all the wet ingredients in a large bowl. Apple sauce, oil, vanilla, vinegar, oat milk, 3 tbsp grated apple.

Step three. Mix the dry ingredients with the wet ingredients. Pour mix into parchment lined or greased cake pan. Cook on 350 for 25 – 30 minutes or until a toothpick comes out clean. Let the cake cool before taking out of pan. Transfer to a plate or cake dish and ice with chosen caramel sauce and the sliced almonds for garnish. If doing a second layer, repeat all instructions and ingredients and carefully place over the first layer and ice again.

FAQs & Tips.

Do I have to use caramel sauce?

No, the cake won’t be as sweet without. You can also make a plain icing and this would be delicious as well, or buy store bought icing.

Can I make this gluten free?

Yes, I suggest you use gluten free all purpose flour. I have not tested it with any other flour.

Can I use a different vinegar?

You can, however the flavor will not be as pleasant. I highly recommend using ACV in vegan baking recipes.

Can I use SILK almond milk?

Yes, almond will also work.

Ingredients 

  • cup all purpose flour
  • 1 cup sugar
  • tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup oat milk
  • ¼ cup applesauce, unsweetened
  • tsp apple cider vinegar
  • 2 tbsp olive oil, *
  • tsp vanilla extract
  • 3 tbsp shredded apple , *optional
  • ¼ cup sliced almonds for garnish
  • ¼ cup caramel , *

Instructions

Notes

You can also use coconut oil or canola oil
You will need more caramel if you are making 2 or 3 layers for this cake. Be sure it is vegan caramel if making this vegan. You can find vegan caramel at specialty shops or online.
