Why Make These Peanut Spicy Noodles

Originating from the vibrant world of Asian cuisine, these noodles are an enticing blend of fiery spices and salty, creamy peanut sauce that will transport your taste buds to another level. Whether you’re a spice enthusiast or just looking to explore new culinary flavors, these noodles are sure to satisfy your cravings.

This dish is ready quickly, have it ready to go in about 30-40 minutes. It has protein from the chicken, or you can leave it vegetarian. Ingredients Needed

Chicken Breast. Traditionally, and often this dish is served vegetarian but I love to add chopped chicken breasts to add protein and make it more filling.

Fresh Ginger. Ginger offers a unique flavor to the dish, I like to use fresh ginger for the ultimate punch.

Peanut Butter. This is the main star of the show, it adds all the creamy flavor. Use a high quality, low salt peanut butter for the best flavor and outcome.

Noodles. I use rough cut noodles. You can find these at Trader Joes, asian specialty markets or in some grocery stores in the international aisle.

Sriracha. Use any chili sauce of choice, this is what add the heat to the dish!

Recipe Variations

Chicken. You can use any protein of choice; tofu, chicken, ground chicken, or shrimp work best.

Peanut Butter. Use creamy or chunky peanut butter. You can also use cashew butter or almond butter, do keep in mind the texture will be slightly different if you make these substitutes but still delicious.

Noodles. Other varieties of noodles that work great, ramen, rice noodles, spaghetti noodles, udon noodles and many more. Gluten Free options will also work.

Soy Sauce. You can use coconut aminos or tamari if you need to make this gluten free.

Steps To Make This Recipe

Steps to make this recipe in a sauce pan and a glass bowl with a whisk.

Step One. Start with seasoning the chicken breast with salt and pepper. Add olive or sesame oil to a heavy bottomed pan cook the chicken on each side for about 8-10 minutes each side on medium heat or until the chicken is cooked through (165º)

Step Two. Once the chicken is 10 minutes from being done, boil a large pot of water and cook the noodles of choice according to package. I use the rough cut noodles and they take abut 10 minutes to prepare.

Step Three. While the noodles and chicken are cooking, mix up the spicy peanut sauce in a medium sized(Photo 3).

Step Four. Once the chicken is finished, put it on a plate and let it rest. Wipe the dish clean and add the other 1/2 tsp oil to the pan. On medium heat, gently brown the garlic and ginger for about 1-2 minutes, add it to the spicy peanut sauce.

Step Five. When noodles are finished SAVE about 2 cups of leftover pasta water. Add about 1/2 -1 cup of the hot pasta water to the spicy peanut sauce in the bowl. Whisk until it’s blended well. Cube the cooked chicken.

Step Six. Add the noodles to the heavy bottomed pan, turn the heat on the lowest setting. Quickly add half of the spicy peanut sauce, cubed chicken and toss well. Add more pasta water if needed, a little at a time to help spread the sauce and thin it out to cover all the noodles (Photo 4). Add more spicy peanut sauce as needed, do not add all the sauce at once!

Step Seven. Plate the noodles and garnish with crushed peanuts, green onions and extra peanut sauce.

Store leftovers in an airtight container in the fridge for up to 4 days. You can freeze these for up to 2 months.   

Recipe FAQ

Can I control the spice level in Spicy Peanut Noodles?

Yes, for more spice add more Sriracha, for less spice, use less sriracha and less red pepper flakes.

Can I make this in advance?

Yes, this meal makes a great meal prep. I suggest you add a little water to it when reheating to help thin the peanut butter while it heats.

Recipe Tips

Do not add all the water to the peanut sauce at once! Add a little at a time, mix and taste. I prefer a thinner sauce, it coats the noodles more evenly and it’s more enjoyable to eat.

Don’t add all the spicy peanut sauce at once. This recipe is meant to have some leftover to add garnish and more flavor. Plus you can use it for leftovers.

Control the spice. Add more sriracha or less to control the heat. You can also add extra honey to sweeten things up if needed.

Keep leftover pasta water. Be sure to save hot leftover pasta water to mix into the peanut sauce. It blends perfectly and adds an extra flavor level. If you forget, do not stress, just use regular hot water in place!

Recipe Pairings

Peanut Spicy Noodles

Ingredients 

Chicken

  • ½ tsp sesame or olive oil , for cooking the chicken
  • 2 large chicken breasts, cut in half for quicker cooking
  • ½ tsp salt
  • ¼ tsp pepper

Spicy Peanut Noodles

  • 16 oz rough cut noodles , *see notes
  • 1 tsp peanut oil , to sauté the garlic and ginger
  • 3 garlic cloves, minced
  • 1 Tbsp ginger, minced
  • 3 Tbsp green onions, chopped, for garnish
  • 3 Tbsp peanuts, crushed, for garnish
  • 3 Tbsp cilantro, chopped, for garnish

Spicy Peanut Sauce

  • cup peanut butter , *low salt peanut butter
  • 4 Tbsp soy sauce, low sodium
  • 3-4 Tbsp Sriracha
  • 1 tsp rice vinegar
  • 2 Tbsp honey , *see notes
  • tsp red pepper flakes
  • 1-1½ cup pasta water or hot water

*udon, ramen, rice noodles, spaghetti noodles will also work. 
*maple syrup will also work.
*if you forget to grab pasta water, regular hot water will also work.
