Peanut Spicy Noodles

When it comes to comfort food with a kick, few dishes can rival the allure of Peanut Spicy Noodles With Chicken. Ready in 30 minutes!

Equipment

Ingredients

Chicken

  • ½ tsp sesame or olive oil for cooking the chicken
  • 2 large chicken breasts cut in half for quicker cooking
  • ½ tsp salt
  • ¼ tsp pepper

Spicy Peanut Noodles

  • 16 oz rough cut noodles *see notes
  • 1 tsp peanut oil to sauté the garlic and ginger
  • 3 garlic cloves, minced
  • 1 Tbsp ginger, minced
  • 3 Tbsp green onions, chopped for garnish
  • 3 Tbsp peanuts, crushed for garnish
  • 3 Tbsp cilantro, chopped for garnish

Spicy Peanut Sauce

  • cup peanut butter *low salt peanut butter
  • 4 Tbsp soy sauce, low sodium
  • 3-4 Tbsp Sriracha
  • 1 tsp rice vinegar
  • 2 Tbsp honey *see notes
  • tsp red pepper flakes
  • 1-1½ cup pasta water or hot water

Instructions

  • Start with seasoning the chicken breast with salt and pepper. Add oil to a heavy bottomed pan cook the chicken on each side for about 8-10 minutes each side on medium heat or until the chicken is cooked through (165º).
  • Once the chicken is 10 minutes from being done, boil a large pot of water and cook the noodles of choice according to package. I use the rough cut noodles and they take abut 10 minutes to prepare.
  • While the noodles and chicken are cooking, mix up the spicy peanut sauce,
  • Once the chicken is finished, put it on a plate and let it rest. Wipe the dish clean and add the other 1/2 tsp oil to the pan. On medium heat, gently brown the garlic and ginger for about 1-2 minutes, add it to the spicy peanut sauce.
  • When noodles are finished SAVE about 2 cups of leftover pasta water. Add about ½ -1 cup of the hot pasta water to the spicy peanut sauce in the bowl. Whisk until it's blended well. Cube the cooked chicken.
  • Add the noodles to the heavy bottomed pan, turn the heat on the lowest setting. Quickly add half of the spicy peanut sauce, cubed chicken and toss well. Add more pasta water if needed, a little at a time to help spread the sauce and thin it out to cover all the noodles. Add more spicy peanut sauce as needed, do not add all the sauce at once!
  • Plate the noodles and garnish with crushed peanuts, green onions and extra peanut sauce. 

Notes

*udon, ramen, rice noodles, spaghetti noodles will also work. 
*maple syrup will also work.
*if you forget to grab pasta water, regular hot water will also work. 
Store leftovers in an airtight container in the fridge for up to 4 days, add more peanut spice once heated as needed! You can freeze these for up to 2 months.
