  • Cucumbers. I use english cucumbers, they have a thinner skin that is easier to digest and enjoy.
  • Tomatoes. Roma tomatoes or hot house/vine ripe tomatoes will work best.
  • Red Onion. This adds a little spice and aromatics to the salad.
  • Seasonings. Salt, pepper, garlic powder, dried Italian seasoning, red pepper flakes.
  • Soy Sauce. This is for the dressing, you can use Tamari sauce if desired.
  • Olive Oil & Red Wine Vinegar. This is the base of the light dressing.
  • Fresh Herbs. Fresh basil is a MUST ๐Ÿ™‚ but I also like to use fresh parsley and/or cilantro.

Cucumber With Tomato Salad Variations

Add More Toppings! This is great with feta, or diced avocado. Both add a nice creamy texture. You can also add cooked quinoa, farro or other grains to give it a bit more heartiness

Add Protein. Chop up cooked shrimp for a more protein worthy salad.

Whip up that dressing. This takes just a quick few minutes. Just add everything to a bowl or jar, whisk or shake it together well.

Chop Everything up! Start with dicing the tomatoes, red onions and cucumbers to similar sizes.

Mix Everything Together. Add all the ingredients to a large bowl, add about half the dressing. Mix it up really well. Add more dressing as needed. Enjoy!

Yes, but I recommend you eat it within 2-3 hours after mixing The water from the cucumber gets pulled out and it will get quite runny.

Ingredients 

  • 4 roma tomatoes, diced, 3 hot house tomatoes if large
  • 1 english cucumber, diced
  • ¼ cup red onion, diced
  • 4 Tbsp fresh basil leaves, chopped
  • 3 Tbsp parsley, chopped

Dressing

  • ¼ cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 Tbsp soy sauce, low sodium , tamari or coconut aminos will also work
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp italian seasoning blend , (dried oregano, dried basil)
  • ¼ tsp red pepper flakes

Instructions
