Cucumber With Tomato Salad

Fresh, hydrating Cucumber With Tomato Salad full of delicious flavors. The perfect summer salad to enjoy with friends and family.

Equipment

  • sharp knife
  • large serving bowl

Ingredients

  • 4 roma tomatoes, diced 3 hot house tomatoes if large
  • 1 english cucumber, diced
  • ¼ cup red onion, diced
  • 4 Tbsp fresh basil leaves, chopped
  • 3 Tbsp parsley, chopped

Dressing

  • ¼ cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 Tbsp soy sauce, low sodium tamari or coconut aminos will also work
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp italian seasoning blend (dried oregano, dried basil)
  • ¼ tsp red pepper flakes

Instructions

  • Whip up that dressing. This takes just a quick few minutes. Just add everything to a bowl or jar, whisk or shake it together well. Give it a taste and adjust as needed.
  • Chop Everything up! Start with dicing the tomatoes, red onions and cucumbers to similar sizes.
  • Mix Everything Together. Add all the ingredients to a large bowl, add about half the dressing. Mix it up really well. Add more dressing as needed. Enjoy right away.

Notes

  • Enjoy the salad within a few hours, It gets quite watery if you let it sit for too long. 
  • Taste the dressing before serving. You may want a dash more salt or soy sauce for more flavor! 
  • I recommend you eat it within 2-3 hours after mixing The water from the cucumber gets pulled out and it will get quite runny.
