- 4 roma tomatoes, diced 3 hot house tomatoes if large
- 1 english cucumber, diced
- ¼ cup red onion, diced
- 4 Tbsp fresh basil leaves, chopped
- 3 Tbsp parsley, chopped
Dressing
- ¼ cup olive oil
- 1 Tbsp red wine vinegar
- 1 Tbsp soy sauce, low sodium tamari or coconut aminos will also work
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp italian seasoning blend (dried oregano, dried basil)
- ¼ tsp red pepper flakes
Whip up that dressing. This takes just a quick few minutes. Just add everything to a bowl or jar, whisk or shake it together well. Give it a taste and adjust as needed.
Chop Everything up! Start with dicing the tomatoes, red onions and cucumbers to similar sizes.
Mix Everything Together. Add all the ingredients to a large bowl, add about half the dressing. Mix it up really well. Add more dressing as needed. Enjoy right away.
- Enjoy the salad within a few hours, It gets quite watery if you let it sit for too long.
- Taste the dressing before serving. You may want a dash more salt or soy sauce for more flavor!
