Why Make This Cinnamon Sugar Bread
For starters this bread is addictive. It’s similar in taste to a cinnamon roll but with a moist soft bread texture. This recipe uses coconut sugar for a more nutty, full flavor. Coconut sugar pairs so well with cinnamon, they are a match made in heaven. This Bread can also be made into muffins, however I prefer the bread. The optional icing really brings this treat to life.
Ingredients Needed
Cinnamon sugar bread doesn’t have a lot of ingredients to make it come to life. The ingredients are simple, and if you’d like to cut the sugar for this recipe and have it for breakfast, you can easily skip the optional icing over the top.
Flour. All purpose flour. Gluten Free All Purpose will also work.
Coconut Sugar. You can also use granulated sugar, however I prefer coconut sugar for this recipe as it pairs nicely with the cinnamon.
Coconut Oil. Olive Oil will also work.
Almond Milk. I use unsweetened original
Cinnamon.
Baking Powder.
Egg.
How To Make This Recipe
Simple steps make this bread come to life.
Step one. Preheat oven to 350 degrees. Line a bread loaf tin with parchment paper.
Step two. In a large bowl whisk together the sugar, flour, baking powder, salt, cinnamon.
Step Three. In a small bowl beat the egg lightly. Add in the milk, vanilla and melted coconut oil or oil of choice.
Step Four. Add the wet ingredients to the dry ingredients and stir. Do not over mix! Spoon the batter into the bread loaf tin. Sprinkle the extra cinnamon and coconut sugar over the top of the raw bread dough. Bake for about 20 – 25 minutes. Oven temps will vary, and I cook in high altitude, so please keep an eye on the bread by checking it with a toothpick to be sure it comes out clean.
Step Five (Optional) To make Icing, add one cup of powdered sugar to a bowl and whisk in 1 tbsp of almond milk. If you prefer your icing thicker, you can add 1/4 cup of powdered sugar after whisking. Drizzle over bread loaf once it has cooled.

Ingredients
- 1½ cup all purpose flour
- 1 cup coconut sugar
- 1½ tsp baking powder
- ⅛ tsp salt
- ½ cup almond milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ⅓ cup melted coconut oil or butter, *
- 1 large egg
Cinnamon Sugar Topping
- 3 tbsp coconut sugar
- ½ tsp cinnamon
Optional Icing
- 1 cup powdered sugar
- 1 tbsp almond milk, add 1 tsp more for runnier icing. add 1/4 cup more of powdered sugar for a thicker icing
Instructions
- Preheat oven to 350 degrees. Line a bread loaf tin with parchment paper.
- In a large bowl whisk together the sugar, flour, baking powder, salt, cinnamon.
- In a small bowl beat the egg lightly. Add in the milk, vanilla and melted coconut oil or oil of choice.
- Add the wet ingredients to the dry ingredients and stir. Do not over mix! But You may need to use your hands to mix, it will be thick, Spoon the batter into the bread loaf tin. Spread it to it's even and some what flat on top. Sprinkle the extra cinnamon and coconut sugar over the top of the raw bread dough (See below). Bake for about 25 – 30 minutes. ** Oven temps will vary, and I cook in high altitude, so please keep an eye on the bread by checking it with a toothpick to be sure it comes out clean around 25 minutes.
For The Topping
- In a small bowl mix coconut sugar and cinnamon. Sprinkle evenly over raw dough before baking.
- (Optional Icing) To make Icing, add one cup of powdered sugar to a bowl and whisk in 1 tbsp of almond milk. If you prefer your icing thicker, you can add 1/4 cup of powdered sugar after whisking. Drizzle over bread loaf once it has cooled.
