Cinnamon Sugar Bread
Cinnamon Sugar Bread makes a great treat for breakfast or after dinner. If you loved cinnamon sugar toast growing up, you will love this dairy free recipe.

- 1½ cup all purpose flour
- 1 cup coconut sugar
- 1½ tsp baking powder
- ⅛ tsp salt
- ½ cup almond milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ⅓ cup melted coconut oil or butter *
- 1 large egg
Cinnamon Sugar Topping
- 3 tbsp coconut sugar
- ½ tsp cinnamon
Optional Icing
- 1 cup powdered sugar
- 1 tbsp almond milk add 1 tsp more for runnier icing. add 1/4 cup more of powdered sugar for a thicker icing
Preheat oven to 350 degrees. Line a bread loaf tin with parchment paper.
In a large bowl whisk together the sugar, flour, baking powder, salt, cinnamon.
In a small bowl beat the egg lightly. Add in the milk, vanilla and melted coconut oil or oil of choice.
Add the wet ingredients to the dry ingredients and stir. Do not over mix! But You may need to use your hands to mix, it will be thick, Spoon the batter into the bread loaf tin. Spread it to it's even and some what flat on top. Sprinkle the extra cinnamon and coconut sugar over the top of the raw bread dough (See below). Bake for about 25 - 30 minutes. ** Oven temps will vary, and I cook in high altitude, so please keep an eye on the bread by checking it with a toothpick to be sure it comes out clean around 25 minutes.
For The Topping
In a small bowl mix coconut sugar and cinnamon. Sprinkle evenly over raw dough before baking.
(Optional Icing) To make Icing, add one cup of powdered sugar to a bowl and whisk in 1 tbsp of almond milk. If you prefer your icing thicker, you can add 1/4 cup of powdered sugar after whisking. Drizzle over bread loaf once it has cooled.
*Olive oil will also work
*Bread is sweet without icing, but I enjoy the icing as it tastes more like a cinnamon roll bread ;)
