Ingredient Notes

A few tidbits about the ingredients needed in this recipe.

All other ingredients and measurements can be found in the recipe card towards the bottom of this post. 

Ingredients to make Shrimp Skewers in the Oven in small bowls.

Shrimp. Use frozen, thawed shrimp or fresh shrimp if you have access to it! Both work great. I go for Large, but jumbo will work.

Olive Oil. Use a high quality neutral in flavor oil for this recipe.

Seasonings. This is was makes the recipe stand out! You will need salt, pepper, Italian seasoning blend, garlic powder, onion powder, paprika.

Lime. This is just to help marinate the shrimp. Lemon will also work.

Recipe Variations & Substitutions

  • Shrimp. Use any shrimp of choice, just be sure it is thawed and cleaned properly.
  • Any neutral oil will work, this is to quickly marinate the shrimp and keep it moist throughout the cook.
  • Cilantro. This is used as a garnish, use parsley if needed.

Steps To Make This Recipe

Let’s get cooking! Grab your kitchen utensils and preheat the oven.

Step One. Preheat your oven to 400°F and prepare a baking sheet by lining it with parchment paper for easy clean up.

Step Two. Pat the thawed shrimp dry with paper towel, this helps the seasoning and marinade to stick to them! Add in all the seasonings to the bowl, citrus juice, and olive oil.

Step Three. Let the shrimp sit for just a few minutes.

Prepare the Shrimp

Step Four. Thread the marinated shrimp onto skewers starting at the sharp end of the skewer. Repeat this process until you have 4 to 5 skewers, each holding 5- 6 shrimp each.

Step Five. Bake the shrimp in the preheated oven for about 4 minutes. Set the oven to broil high, cook for another 2 minutes. Pull the shrimp out and let it rest! It should be light pink and opaque. Spoon any drippings from the skewers back over the shrimp for extra flavor.

Step Six. Eat as is or enjoy with one of my sauces; Creamy Pesto Dressing, Lemon Honey Dressing or Tahini Herb Dressing.

Recipe Tips

  • Don’t Over-Marinate. Marinate the shrimp for just a few minutes. Over-marinating can change the texture of the shrimp and make them cook much quicker.
  • Soak Wooden Skewers. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning in the oven.
  • Customize Seasonings. Adjust the seasonings to suit your personal taste. You can make the recipe spicier, more citrusy, or milder as desired.
  • Make Ahead. You can prepare and marinate the shrimp in advance. However, it’s best to thread them onto skewers just before cooking to prevent the shrimp from becoming mushy.
  • Storing. Place leftover shrimp skewers in an airtight container in the refrigerator for up to 3 days.
Can I Season Oven Baked Shrimp Skewers Differently?

Yes, you can use barbecue seasonings or lemon pepper seasonings, the sky is the limit. Feel free to play around with seasoning.

Are Shrimp Skewers Healthy?

Shrimp is a great source of protein, so yes, they are healthy! They are gluten and dairy free as well.

What To Serve With Shrimp Skewers

There are endless options for these oven baked skewers. Pair them with a Strawberry Goat Cheese Salad, Asian Cabbage Salad, Kale Crunch Salad, or my Kale & Lentil Salad.

Veggie loaded dishes like Roasted Golden Beets, or Spicy Cucumber Salad would pair wonderfully as well.

Oven Baked Shrimp Skewers

Equipment

  • 4-6 skewers wood or metal!
  • large mixing bowl

Ingredients 

  • 1.25 lb large shrimp , peeled & cleaned
  • 2 Tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp Italian seasoning , *see notes
  • 2 Tbsp fresh lime juice , or lemon juice!
  • 2 Tbsp fresh cilantro, chopped , or parsley!

Optional Sauce
