This tomato relish is insanely delicious. It has a rich, nutty flavor from seasoning and it pairs wonderfully on so many dishes, or use it as a chip dip. Easy, and loved by everyone.

Why Make This Tomato Relish
This relish is so beautifully flavored, I can’t recommend it more! It’s easy to make, full bodied in flavors from spices like all spice. The veggies are all bite sized and it pairs great on chicken, salmon or you can have it as a dip. It’s similar to a fresh salsa or pico de gallo but such a unique flavor. It has a sweet, savory flavor you will love.
Ingredients Needed
Tomatoes. I like to use cherry tomatoes, they are the most rich in color and I favor the flavor.
Seasoning. This is where most of the flavor is! Allspice, ginger, salt, pepper, cinnamon.
Fresh oregano. This is found with all the other fresh herbs. It adds color and a wonderful flavor that pairs great with tomato.
Green Bell Pepper. You can use any color bell pepper but I love the color the green brings.
Vinegar. Red wine vinegar and balsamic vinegar. They both bring their own flavor to the recipe.
Sugar. The sweetness from the sugar brings everything together and really helps bring out the allspice and warming flavor.

Recipe Variations
Cherry Tomatoes. Any tomato of choice will work.
Green Bell Pepper. Use any color of bell pepper.
Onion. You can use red onion as well if wanted.
Fresh Oregano. Fresh basil will also work or you can use dried oregano.
Red Wine Vinegar. Rice vinegar will also work, or apple cider vinegar.
How To Make This Recipe
Step One. Preheat Oven to 400º. Finely chop tomatoes. Set them aside in a large mixing bowl. Finely chop bell pepper, Jalapeño, onion add them to a cooking sheet. Drizzle them in olive oil and a pinch of salt and pepper. Roast for about 10 -12 minutes until they are sweating and fragrant.
Step Two. In a small bowl whisk together vinegar, sugar, seasonings, 1/2 tsp olive oil. Set aside.
Step Three. Finely chop and mince garlic, ginger, oregano and parsley. Add everything to a large serving bowl and toss well. Serve over fish, chicken or scoop with chips and enjoy as an appetizer.

- ¼ cup yellow onion
- ⅓ cup green bell pepper, 1 small pepper
- 2 garlic cloves, minced
- 1 tsp olive oil , divided
- 1 Jalapeño, diced
- 2 Tbsp red wine vinegar
- 1 Tbsp balsamic vinegar
- 2 Tbsp white sugar
- ½ tsp salt
- ½ tsp ginger powder
- ½ tsp all spice
- ¼ tsp cinnamon
- 2 Tbsp fresh parsley , chopped
- 2 Tbsp fresh oregano, chopped
