Why Make Green Goddess Caprese Melts

These are inspired by a popular takeout chain. Of course meals made at home are always better, healthier and more affordable so I had to remake it.

  • Easy To Make. They really require minimal effort.
  • Customizable. You can add extra veggies or even grilled chicken!
  • Homemade Green Goddess Dressing. You will love this tangy fresh dressing.

Ingredient Notes

All other ingredients and measurements can be found in the recipe card towards the bottom of this post. 

  • Baguette. I always make these on french baguettes from the bakery section at the store. You can easily stuff a pita with these ingredients as well.
  • Fresh Mozzarella. I recommend using fresh mozzarella that you can slice yourself for the ultimate flavor. Shredded will also work well.
  • Roma Tomatoes. I find these are the perfect size and they typically have less moisture so they don’t make the bread soggy.
  • Arugula. This is a peppery green that’s perfect on the melt.
  • Optional Toppings. Parmesan & Balsamic glaze make for wonderful additions to the Green Goddess Caprese Melts

Green Goddess Dressing Ingredients

  • Greek Yogurt. Use plain! Sour Cream will also work.
  • Lemon.
  • Fresh Herbs. Parsley, basil, mint.
  • Salt & Pepper.
  • Shallot. This is a mild onion.

Recipe Variations

  • Dressing. If you don’t want to do the Green Goddess Dressing, you can use ranch or Pesto Dressing instead.
  • Add some Protein to the sandwich. I highly recommend adding greed chicken to it or sliced turkey.

Steps To Make Green Goddess Caprese Melts

Steps to make this recipe on a white counter and with a small baking sheet.

Ready to toast up these melts? Grab your ingredients and preheat the oven.

  • Step One. Preheat the oven to 400º. Make the green goddess dressing.
  • Step Two. Blend the dressing ingredients together, give it a taste and adjust as needed (photo1).
  • Step Three. Spritz the baguette with a little oil in the middle. Toast it on a baking sheet for 3-4 minutes.
  • Step Four. Build the melt! Toast it back in the oven for another 5-10 minutes or until the cheese is melted and bread is browned and crispy. Be sure it doesn’t burn (photo 2-3).
  • Step Five. Add the fresh arugula after the second toasting, close it up, slice it in half and enjoy.

Recipe Tips

  • Taste as you go! Add a little more salt, pepper or basil to the green goddess dressing as needed.
  • Don’t burn the baguette. Keep a close eye on the melt, you want to cheese to melt but the bread should just be browned nicely. You can cover it with tinfoil if desired, this will prevent the bread fro burning but will require a little longer in the oven.
  • Save some dressing to add after the toast, you can drizzle it as you eat or dip for extra yumminess.

Green Goddess Caprese Melts

Equipment

  • small food processor or blendar
  • small baking sheet

Ingredients 

  • 1 10-12 inch french baguette
  • 2 roma tomatoes, thinly sliced
  • ½ cup mozzarella, sliced, 3-5 pieces sliced
  • ½ cup arugula
  • 1 Tbsp grated Parmesan , optional for garnish
  • 2 Tbsp balsamic glaze, optional for garnish

Green Goddess Dressing

  • cup plain greek yogurt
  • 3 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • ½ Tbsp shallots
  • ¼ cup fresh basil
  • 2 Tbsp fresh parsley
  • 2 Tbsp fresh mint

Instructions 

  • Preheat the oven to 400º. Make the green goddess dressing. 
  • Blend the dressing ingredients together, give it a taste and adjust as needed (lemon, seasonings, fresh herbs, shallot, yogurt)
  • Spritz the baguette with a little oil in the middle. Toast it on a baking sheet for 3-4 minutes. 
  • Build the melt! Toast it back in the oven for another 5-10 minutes or until the cheese is melted and bread is browned and crispy. Be sure it doesn't burn.
  • After the second toast, add the fresh arugula, parmesan and balsamic if using. Feel free to drizzle extra green goddess dressing if desired, enjoy!
