Green Goddess Caprese Melts

Skip the takeout and make delicious, tangy Green Goddess Caprese Melts at home. Wholesome ingredients, easy to make and a delight.

Equipment

  • small food processor or blendar
  • small baking sheet

Ingredients

  • 1 10-12 inch french baguette
  • 2 roma tomatoes, thinly sliced
  • ½ cup mozzarella, sliced 3-5 pieces sliced
  • ½ cup arugula
  • 1 Tbsp grated Parmesan optional for garnish
  • 2 Tbsp balsamic glaze optional for garnish

Green Goddess Dressing

  • cup plain greek yogurt
  • 3 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • ½ Tbsp shallots
  • ¼ cup fresh basil
  • 2 Tbsp fresh parsley
  • 2 Tbsp fresh mint

Instructions

  • Preheat the oven to 400º. Make the green goddess dressing. 
  • Blend the dressing ingredients together, give it a taste and adjust as needed (lemon, seasonings, fresh herbs, shallot, yogurt)
  • Spritz the baguette with a little oil in the middle. Toast it on a baking sheet for 3-4 minutes. 
  • Build the melt! Toast it back in the oven for another 5-10 minutes or until the cheese is melted and bread is browned and crispy. Be sure it doesn't burn.
  • After the second toast, add the fresh arugula, parmesan and balsamic if using. Feel free to drizzle extra green goddess dressing if desired, enjoy!

Notes

  • Taste as you go! Add a little more salt, pepper or basil to the green goddess dressing as needed.
  • Don't burn the baguette. Keep a close eye on the melt, you want to cheese to melt but the bread should just be browned nicely. You can cover it with tinfoil if desired, this will prevent the bread fro burning but will require a little longer in the oven.
  • Save some dressing to add after the toast, you can drizzle it as you eat or dip for extra yumminess.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
