Try this deconstructed California Roll Cucumber Salad. Everything you love in an iconic cucumber roll, made with real crab and delicious flavor. Serve it over rice or enjoy it as it, low-carb. I know you will make this salad weekly as the temperatures rise.

Why You Will Love California Roll Cucumber Salad.
Cucumber salads are always so delicious, like my Spicy Cucumber Salad. But this one is a little more filling, and it’s such a fun twist on flavors. California rolls are always a go-to when I have sushi so I had to try my own version on this recipe!

Ingredient Notes

All other ingredients and measurements can be found in the recipe card towards the bottom of this post.
- Cucumber. I use an english cucumber, the skin is thinner and much more enjoyable in my opinion but a regular cucumber will also work great.
- Crab Meat. I use real crab meat, found at the deli counter or near the fresh fish. But you can also use imitation crab meat or skip it!
- Soy Sauce. This add the salt, and some flavor.
- Green Onions.
- Mayonnaise. I prefer Kewpie mayo, its got a great tang to it!
- Cream Cheese. This is optional, it is a lot harder to mix into the salad so you may want to use a fork and mix it with the mayo.
- Pickled Ginger. This is optional but so yummy.
- Sesame Seeds. Use black or white sesame or use Everything But the Bagel Seasonings.
- Avocado. One of my favorite add ins!
- Nori. Also known as dried seaweed. This is optional but it really ties everything together.
Steps To Make This Recipe

- Step One. Using a sharp knife or a mandolin, carefully slice the cucumber into thin slices over a large jar or bowl.
- Step Two. Once the cucumbers are ready, add in all the ingredients over the top, if using a large jar, shake it really well until everything is well incorporated. If using cream cheese, try to whisk it together with the mayonnaise before adding it to the cucumbers.
- Step Three. Once everything is well incorporated, if using a jar, eat it out of the jar or pour it into a bowl.
- Step Four. Garnish it with a little extra sesame seeds and green onions, add some sriracha or extra soy sauce if desired and enjoy!

What To Serve With California Roll Cucumber Salad
This is a great light meal on it’s own. You can also serve it with so many other yummy meals. I love it with Thai Basil Chicken Fried Rice, Vegetarian Egg Rolls, Jalapeño Chicken and so much more.
Recipe Tips
- Eat the salad right away! If you try to keep it in the fridge it can get a bit watery and soggy.
- Use what you like! Feel free to customize this recipe, serve it with rice or you can use canned tuna fish instead of crab.
- If you are using cream cheese you can either serve it on top in small bites or you can mash it in with the mayo before mixing the salad.
- Add more soy sauce if desired.

Equipment
