These vegetarian mini peppers are a great way to get more veggies into your diet.

They make a great appetizer or light meal! Kids love them too.

You can use big bell peppers if you need to make a bigger snack.

I wasn’t kidding when I said minimal ingredients! This recipe calls for three main ingredients plus optional seasoning.

Mini Peppers: These little peppers are tasty. They have a light sweet flavor and are the perfect vessel for these ingredients. You will want to buy them fresh from the produce aisle at your local grocery store.

Hummus. Any flavor will do! You can also use white bean or black bean hummus. If you aren’t a fan of hummus you can use ricotta or another thick dip of choice. We just need a little!

Mozzarella or Feta. Or goat cheese or cheddar, really any cheese will work. Plant based cheese will also work or you can simple skip the cheese and just do hummus.

Seasonings. These are optional for after the vegetarian stuffed peppers are cooked. I use a little salt, oregano and fresh basil if I have any lying around. The peppers are great without this ingredient as well!

How To Make Vegetarian Stuffed Peppers.

Step 1. Cut the tops of the peppers off, discard the stems.

Step 2. Carefully slice a little slit in the peppers length wise. This will help to spread the ingredients in the peppers and keep the ingredients from overflowing out of the top of the pepper.

Step 3. With a butter knife, stuff peppers with about a dime size of hummus. A little goes a long way, try to spread it around the pepper as best as you can. Next, stuff the peppers with chopped cheese of choice.

Step 4. Lay peppers onto a sprayed piece of foil on a cooking sheet or into your air fryer. Be sure the slit side is facing up so they don’t spill out all over. Gently place them in the oven on broil high for about 10 minutes or on 375 in the air fryer for 8 minutes. Enjoy!

Do I have to use cheese?

No you can make these stuffed vegetarian peppers with just hummus.

What other cheeses work?

Really any cheese you love will work with this recipe.

How long do these keep in the fridge?

About 3 days they will keep.

I don’t like hummus!

No problem, you can use any dip you like or you can skip the hummus and just use cheese and seasonings.

I prefer them in the air fryer, they really char up nicely. If you don’t have an air fryer, it is no problem, a toaster oven or oven will work just as well!

Be sure to let them cool a little before digging in.
