These chocolate chip granola cookies are decadent, soft, vegan and ready in under 30 minutes. They are bursting with gooey chocolate with bites of granola texture throughout. You will want to add these to your baking arsenal.

Why Make Chocolate Chip Granola Cookies

These granola cookies are totally vegan, they are soft, chewy and easy to make.

The perfect granola crunch is baked throughout the cookie. You can use any granola you prefer for this recipe.

They are ready in under 30 minutes and the whole family will enjoy them. No one will know these decades cookies are vegan!

What You Need To Make These Granola Cookies.

Ingredients for granola cookies.

Flour. I used all purpose flour. If gluten free, sub all purpose gluten free flour.

Baking soda.

White granulated Sugar. This adds a nice sweetness to the cookies and keeps them neutral in color.

Coconut Sugar.This takes the place of brown sugar. Coconut sugar is a little more moist and less sweet in flavor.

Vegan yogurt. I prefer to use cashew, coconut or almond yogurt in this recipe. You may also use plant based milk.

Neutral tasting olive oil. Make sure it has no bitter flavor!

Vanilla extract.

Chocolate Chips. Any kind you would like!

Granola. Any granola of choice will work.

How To Make These Granola Cookies.

Steps to make cookies.

Step one. Preheat one to 350. Mix all the wet ingredients in a medium sized bowl. Oil, vanilla extract, yogurt or milk.

Step two. In another bowl, whisk together all the dry ingredients; flour, salt, baking soda, sugars, chocolate chips and granola. Be sure to crush the big chunks of granola. We want a nice crunch throughout the cookie not just one big cluster.

Step Three. Mix the dry into the wet ingredients. Mix well. I opt to use my hands to mix this together and break apart any big clusters of granola. Line a baking sheet with parchment paper and scoop out 1.5 inch balls of cookies. Space them about 1 inch apart. push down lightly on each cookie so they aren’t so thick and cook evenly. Cook for about 18 – 20 minutes. Let them cool before moving or enjoying.

Store in an airtight container for up to 5 days on the counter or freeze them in a ziplock for up to three months.

Tips To Know When Making Granola Cookies.

If using yogurt, you may need to adjust the measurements by 1 tablespoon or 2 to be sure the mixture is “wet enough” Use your hands to squeeze everything together well. Plant based yogurts vary in moisture. Dough should be sticky and wet enough to form a nice cookie shape.

Use ANY type of granola you prefer.

Sub coconut sugar for brown sugar if needed.

Skip the chocolate chip if you’d like to cut back on sugar.

Equipment

  • Large Cookie Sheet

Ingredients 

  • 1 cup all purpose flour , *
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ¼ cup white granulated sugar
  • ½ cup coconut sugar, *
  • 4 tbsp plant based yogurt, *
  • 2 tbsp olive oil
  • ¼ tsp vanilla extract
  • cup chocolate chips (I like semi sweet)
  • ½ cup chocolate granola, crushed, *

Instructions 

  • Preheat one to 350. Mix all the wet ingredients in a medium sized bowl. Oil, vanilla extract, yogurt or milk.
  • In another bowl, whisk together all the dry ingredients; flour, salt, baking soda, sugars, chocolate chips and granola. Be sure to crush the big chunks of granola. We want a nice crunch throughout the cookie not just one big cluster. 
  • Mix the dry into the wet ingredients. Mix well, you may need 1 to 2 more tablespoons of yogurt or milk to wet the mixture. You want the mixture thick, sticky but moist enough to form cookies together. I opt to use my hands to mix this together and break apart any big clusters of granola, it also helps with mixing in the yogurt/milk.
  • Line a baking sheet with parchment paper and scoop out 1.5 inch balls of cookies. Space them about 1 inch apart. Push down lightly on each cookie so they aren't so thick and cook evenly. Cook for about 18 – 20 minutes. Let them cool before moving or enjoying. 

Notes

* Use all purpose gluten free flour 
*Can use brown sugar in place
*Plant milk will also work, but you will need to start with 3 tablespoons
Store in an airtight container for up to 5 days on the counter or freeze them in a ziplock for up to three months.

    These cookies are excellent. They have crunch and I used nature valley granola in them. Really great idea to bake granola in them!
