Tossed with a bright lime dressing, it’s the kind of recipe that works with almost any summer meal, and only takes about 15 minutes to make.

One thing I love about this salad is that it doesn’t rely on a long list of ingredients to be interesting. Every ingredient brings something different to the bowl. Corn: Fresh sweet corn is my favorite when it’s in season because it adds the best flavor and a crisp, juicy bite. Frozen corn works well too, just thaw it completely and pat it dry. Canned corn works in a pinch, but drain it well so it doesn’t water down the dressing.
Black Beans: Black beans make this salad much more filling than a traditional avocado corn salad. I use canned beans for convenience, but be sure to rinse and drain them well so the dressing stays fresh and bright.
Avocado: Choose avocados that are just ripe. If they’re too soft, they’ll break apart as you toss the salad. I usually dice and add them last to help them hold their shape.
Fresh Lime Juice: Freshly squeezed lime juice makes a noticeable difference here. It brightens the dressing, balances the sweetness of the corn, and helps keep the avocado tasting fresh.
Apple Cider Vinegar: A splash of apple cider vinegar adds a little extra tang and helps round out the lime dressing without making it overly acidic.
How to Make Avocado Corn Salad

Step One. Dice the avocado, bell pepper, jalapeño, onion, and cilantro into small similar-sized pieces. If you’re using frozen corn, thaw it completely and pat it dry before adding it to the salad so it doesn’t water down the dressing. Fresh corn is my favorite because it adds the sweetest flavor and the best crunch. If you’re using fresh corn, slice all the kernels off the cob with a sharp knife.
Step Two. Whisk together the apple cider vinegar, olive oil, lime juice, honey, seasonings, and cilantro until combined. I always taste the dressing before adding it to the salad since the sweetness of corn can vary. Sometimes it needs an extra squeeze of lime while other times a little more salt is all it takes.
Step Three. Add the corn, black beans, vegetables, and avocado to a large bowl. Pour the dressing over the top and gently toss until everything is evenly coated. Try not to overmix once the avocado is added so it keeps its shape. Serve immediately or chill until ready to enjoy.

How to Keep the Corn Salad Fresh
Timing makes a big difference with this salad. The dressing actually tastes better after it has a few minutes to rest with the vegetables, but the avocado is happiest when it’s added right before serving.
If you’re making the salad ahead of time, mix together the corn, black beans, vegetables, and dressing, then fold in the avocado just before serving. This helps the avocado keep its shape and prevents it from becoming overly soft.
I also like to give the salad one final squeeze of fresh lime juice right before serving. It brightens the flavors and makes everything taste freshly made, especially if it’s been sitting in the refrigerator for a few hours.

Ways to Serve It
One of the reasons I make this salad so often is because it fits into almost any meal. I love serving it alongside grilled chicken, burgers, steak, shrimp, or fish tacos.
It’s also one of my favorite toppings for taco bowls or Southwest-style salads when I want to add a little extra freshness and texture.
Leftovers rarely stay around long once someone opens a bag of tortilla chips. It makes a surprisingly good scoopable dip that’s just as tasty as serving it as a side dish.

Make Ahead and Storage
This salad is easy to prep ahead, making it a great option for cookouts or meal prep. If you’re making it in advance, combine everything except the avocado and store it in an airtight container in the refrigerator.
Just before serving, gently fold in the diced avocado, and give the salad a quick toss. If needed, add another squeeze of fresh lime juice to brighten the flavors.
Leftovers will keep in the refrigerator for up to 3 days. The avocado will soften over time, but the salad will still taste great.

Avocado Corn Salad
Equipment
- large bowl
- whisk
Ingredients
- 3 cups cooked corn, about 3 medium/ large ears of corn
- 1 red bell pepper
- 1 15 oz can of black beans, rinsed and drained
- 2 avocados, not overly ripe
- ¼ cup red onion
- 1 Jalapeño , optional
- 4 tbsp fresh cilantro, *Note: you need more for the dressing below
Dressing
- ¼ cup fresh lime juice, *2 limes
- 1 tbsp apple cider vinegar
- 3 tbsp olive oil
- 1 tbsp honey, *see notes
- 1 tsp smoked paprika
- ¾ tsp kosher salt
- ¼ tsp pepper
- ¼ tsp garlic powder
- 2 tbsp fresh cilantro , optional for dressing
Instructions
- If the corn is frozen, thaw it according to the package. I prefer it fresh off the cob for extra crunch. If using fresh corn on the cob, peel and shuck it.
- Mix up all the dressing ingredients in a small bowl, apple cider vinegar, oil, seasoning, chopped cilantro, honey, lime juice. Give it a taste and adjust as needed.
- Chop up the jalapeño, red bell pepper, avocado, onion, and cilantro into bite sized pieces. Try to keep everything close in size.
- With a sharp knife and steady hand, place the corn cob on a non slip cutting board vertically and use the knife to slice all the corn kernels off in a downward direction. Gently separate the kernels if they are all stuck together, some stuck together is okay, and looks beautiful in the salad.
- Assemble salad by adding all the ingredients together, peppers, onion, black beans, cilantro, jalapeño, avocado and pour dressing over the salad. Toss well, serve.
Notes
- To make this salad vegan, use maple syrup instead of honey.
- Fresh corn gives the best flavor and crunch, but frozen corn works well too. Just thaw it completely and pat it dry before adding to the salad.
- Taste the dressing before tossing with the salad. Depending on how sweet your corn is, you may prefer an extra squeeze of lime, a little more honey, or an extra pinch of salt.
- If making ahead, prepare the salad and dressing in advance, then fold in the avocado just before serving for the freshest texture.
- Store leftovers in an airtight container for up to 2 days if the avocado is already mixed in. If you store the avocado separately and add it just before serving, the salad will keep for 4 days.

May be a stupid question, but you recommended using fresh corn on the cob. However, in ingredient list, it says “cooked” corn. You did not give instructions on how long to cook it to maintain the crunch factor.
Fresh or cooked corn will work great, If you use fresh – skip the cooking process. I just recommend thawing/heating up from zen corn 🙂 xoxo
