Teriyaki Beef Bowls

Teriyaki Beef Bowls are a true perfect weeknight meal. Delicious, veggie loaded dinner can be ready in 20 minutes. You will love this meal.

Equipment

Ingredients

  • 1 lb lean ground beef
  • 1 inch fresh ginger, minced
  • 2 cup broccoli, chopped
  • ½ cup long grain rice, uncooked *use more if desired
  • 1 large bell pepper, diced

Quick Teriyaki Sauce

  • cup low sodium soy sauce
  • 1 Tbsp hoisin sauce
  • 1-2 Tbsp honey *see notes
  • 2 Tbsp water
  • 1 tsp garlic powder
  • ½ tsp red pepper flakes
  • 1 Tbsp sesame oil

Toppings

  • 1 large carrot, sliced with a mandolin *matchstick carrots will also work
  • 1 small english cucumber thinly sliced with a mandolin
  • ½ cup edamame, shelled and steamed
  • ¼ cup green onions, chopped
  • ¼ cup pickled onions *optional
  • 4 tsp sesame seeds *optional, black or white will work
  • 3 Tbsp fresh cilantro, for garnish

Instructions

  • Start the rice if using. Make the rice according to the packing, this typically takes 20 minutes. Make the teriyaki sauce by mixing all the ingredients well in a medium sized bowl, set the sauce aside until ready to use. 
  • In a large skillet, cook ground meat, be sure to mince it well. Sauté for about 3-4 minutes. Add minced ginger to the meat, chopped broccoli and peppers. Once the peppers start to sweat a little (about 4 minutes) add in ¾ ths of the teriyaki sauce to the ground meat, the rest will be used as needed to "dress" the bowls. Let it simmer and marinate into the meat on a low simmer for about 2-3 minutes. Turn off heat, set aside. 
  • Assemble the bowls. Start with dividing up the rice into bowls, add teriyaki beef and sauce, shelled/steamed edamame, carrots, cucumbers and pickled onions. Garnish with cilantro, chopped green onions and sesame seeds. Serve and enjoy! 

Notes

*lean ground turkey or chicken will also work
*taste the sauce as you go, use more honey as needed. You can also use brown sugar as well. 
Store leftovers in an airtight container in the fridge for up to 4 days. You can freeze these for up to 2 months.
