Lemon Honey Dressing

- 2 tsp lemon zest
- ¼-⅓ cup extra virgin olive oil *see notes
- 2 lemons, juice squeezed about 1/3 cup
- ¼ tsp salt *more as needed
- ¼ tsp fresh cracked pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp red pepper
- ½ tsp dried basil
- 1-2 tsp dijon mustard or mayonnaise *optional, see notes
- 2-3 Tbsp honey add more to taste as needed!
- 1-2 tsp fresh parsley, finely chopped *optional for garnish, if serving fresh!
In a small bowl whisk together the lemon zest, lemon juice, seasoning, honey, olive oil, and dijon or mayo *if using. Or, add everything to a small jar with lid and shake well.
*add more as needed. Avocado oil will also work as a substitute.
Taste As You Go. Be sure to taste the dressing! It's easy to customize it. Make it sweeter with more honey, make it less thick with 1 Tbsp of water, add more salt or garlic powder as needed.
Make It Creamier! I highly recommend adding 1-2 teaspoons of dijon mustard or mayonnaise to make the dressing more creamy. It's great both with and without but we love to add the creaminess to it for an extra savory twist.
Store in an airtight container in the refrigerator for up to 3 days! Shake well before serving.
