Equipment

  • baking sheet
  • parchment paper
  • melon baller or spoon

Ingredients

  • 4 pears *any variety of pear will work
  • ¼ cup brie *see notes for substitutions
  • 3 Tbsp blue cheese
  • ¼ cup almonds, sliced *see notes
  • 1 tsp fresh or dried thyme
  • 3-4 Tbsp honey *more as needed

Instructions

  • Preheat the oven to 350º. Cut pairs in half and scoop out the center carefully with a spoon or the large side of a melon baller. Add the pears to a parchment lined baking sheet.
  • With the centers facing up, add about 1 tsp of cheese to the center, enough to fill the hole. Sprinkle with fresh or dried thyme. Add nuts and pop into the oven
  • Bake for about 20 minutes, keep an eye on them, some varieties of nuts can brown more easy than others, you can pull them out early if needed and the nuts are getting too browned. Once the pears are finished and the cheese is melted a bit, pull the pears and drizzle them generously with honey. Enjoy!

Notes

*please use any variety of soft cheese you prefer. Feta, goat cheese, all brie or all blue cheese works great. Use a cheese you enjoy.
*walnuts, pecans or pistachios will also work well.
*maple syrup will also work in place of honey.
Store leftovers in an airtight container in the fridge for up to 3 days.
