Make The Crispy Tortilla Shells
Start with making the tortilla shell "bowls" for the Taco Fiesta Salad. Preheat the oven to 350º gently place the burrito sized tortilla into greased oven safe bowls and gently shape them to the bowl. Give them a very light spritz of cooking oil and place the in oven for 5-8 minutes or until it's lightly browned and formed a "bowl". Let them cool completely and gently wiggle them out of the bowl!
Taco Fiesta Bowls
Make the ground beef. Add it to a skillet with the seasonings and brown until cooked through. Taste and adjust salt and pepper as needed. Set aside.
In a large mixing bowl add all ingredients and toppings (except the avocado and nacho chips) to the bowl, add the salsa and sour cream, mix it well! Everything should be nicely coated. Add the salad to the crispy tortilla bowls, top with shredded cheese and nacho chips, cilantro garnish and a squeeze of lime. Enjoy!
- Taste as you go. You may want to add more salt or spice to the ground beef or salad so be sure to taste as you go.
- Don't overcook the shell. Just cook it enough to brown up and get crispy. It can burn quickly so keep a close eye on it.
- Make your own taco seasoning! Mix 1 tsp of; garlic, onion, chili powder, paprika, cumin and 1/2 tsp salt & pepper.
- Make it healthier. Skip the tortilla and just enjoy the salad. You can also skip the nacho chips and cheese to cut some calories, although they are SO good in this salad.
