Strawberry Acai Refresher

- 1 cup white grape juice or apple juice
- 1 cup cold green tea regular or decaffeinated
- 1 tsp lemon juice
- 1½ cup fresh strawberries sliced
- ½ cup raspberries or passion fruit
- ¼ tsp acai powder
Garnish
- Fresh strawberries sliced
- Ice crushed
- Sprig of mint optional
Make the base: Use a jug that will hold at least 3 cups. Add the grape or apple juice, green tea, and lemon juice. Stir.
Add the strawberries, raspberries and acai powder to a high speed blender and blitz until smooth. Strain through a muslin cloth or fine sieve. Pour into the jar with the juice and stir until it's combined.
To serve, using two glasses, layer crushed ice and a few sliced fresh strawberries, then pour the drink over and top with a sprig of mint.
- Dissolve acai powder properly. Mix acai powder with a small amount of warm water before adding it to the drink to prevent clumps.
- Brew the green tea strong. If using green tea, steep it longer than usual (about 5 minutes) to enhance the flavor without making it bitter.
- If you like a sweeter drink, add a touch of honey, agave, or simple syrup. If you prefer it tarter, add an extra splash of lemon juice. You can also add coconut milk for a creamier drink.
- Store leftovers in a jar with a lid and refrigerate for 2 days. Shake well before serving.
