Peanut Butter Rice Krispie Treats
Peanut butter rice krispie treats are a fun and tasty twist on the classic. These are easy, minimal ingredients and won't last long, they are too good.

- ¼ cup butter
- 1 tsp vanilla extract
- 1 10 oz bag of mini marshmallows
- ½ cup creamy peanut butter
- 5¼ cup rice krispie cereal
- 1¼ cup chocolate chips *see notes
- 1½ tsp coconut oil *see notes
Measure out the rice cereal and set aside. In a large 4 qt or larger pot, add the butter, vanilla, peanut butter and marshmallows. Cook on medium to low heat and stir often until the marshmallows melt completely.
Once the marshmallows have melted, add in the rice cereal and stir really well. Ensuring everything is evenly coated. In an 7x7 or 8x8 inch size dish, line with parchment paper.
Add the mix into the dish and press the mixture around to ensure it is even and level. Don't push too hard! otherwise the treats will be hard to bite through. I find just a little pressure to even things out is perfect.
Set the mix aside to cool and form to the dish. You can place it in the fridge for up to 30 minutes if needed.
In a medium sized microwave safe bowl, add in chocolate chips and oil. Microwave for 1 minute, stir mix and then microwave for another minute. Everything should be melty and smooth. Pour over the cooled marshmallow mix. Ensure the chocolate is even, place in the fridge for about 30 min to cool and harden a bit.
Once the chocolate has set, slice into small squares and enjoy!
*any type of chocolate chip will work. I usually use semi sweet. You can also skip the chocolate coating. Feel free to reserve some whole for topping like I did in the photos!
