Peanut Butter Banana Bread
This Peanut Butter Bread is a delicious bread packed with tons of peanut butter flavor perfect for breakfast and loaded with creamy or chunky peanut butter.

- 1½ cup all purpose flour
- ¾ cup coconut sugar
- 1 tsp baking powder
- ½ tsp salt
- 3 Over ripe bananas
- ¼ cup melted coconut oil or butter
- 1 egg room temp
- 1 tsp vanilla extract
- ½ cup chunky peanut butter or any nut butter you prefer!
- 1 tsp cinnamon
Set oven to 350. In a medium bowl, mix all the dry ingredients together with a whisk.
Peel the bananas and mash them together with a fork in a large bowl. Add in all the wet ingredients, egg, oil, vanilla and then slowly combine the dry ingredients into the wet ingredients to make the dough.
Pour mix into a parchment lined bread pan (about 9x9) Top with optional toppings like chocolate chips and raw, shelled, peanuts. If using, use about 4 tbsp of each to top your bread with BEFORE putting into the oven. Bake on 350 for about 35 to 40 minutes or until the toothpick comes out clean.
*chunky or creamy peanut butter will work
*If you have a peanut allergy you can use another nut butter
*chocolate chips and peanuts for toppings it optional. If using, use about 4 tbsp of each to top your bread with BEFORE putting into the oven.
