Peanut Butter Banana Bread

This Peanut Butter Bread is a delicious bread packed with tons of peanut butter flavor perfect for breakfast and loaded with creamy or chunky peanut butter.

  • bread pan

Ingredients

  • cup all purpose flour
  • ¾ cup coconut sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 Over ripe bananas
  • ¼ cup melted coconut oil or butter
  • 1 egg room temp
  • 1 tsp vanilla extract
  • ½ cup chunky peanut butter or any nut butter you prefer!
  • 1 tsp cinnamon

Instructions

  • Set oven to 350. In a medium bowl, mix all the dry ingredients together with a whisk. 
  • Peel the bananas and mash them together with a fork in a large bowl. Add in all the wet ingredients, egg, oil, vanilla and then slowly combine the dry ingredients into the wet ingredients to make the dough.
  • Pour mix into a parchment lined bread pan (about 9x9)  Top with optional toppings like chocolate chips and raw, shelled, peanuts. If using, use about 4 tbsp of each to top your bread with BEFORE putting into the oven.  Bake on 350 for about 35 to 40 minutes or until the toothpick comes out clean.

Notes

*chunky or creamy peanut butter will work
*If you have a peanut allergy you can use another nut butter
*chocolate  chips and peanuts for toppings it optional. If using, use about 4 tbsp of each to top your bread with BEFORE putting into the oven.
