No Bake Granola Bars

These no bake, gluten free, granola bars are the perfect weekday snack to have on hand for busy days.

Equipment

  • 8x8 baking dish or smaller - not larger.

Ingredients

  • 2⅔ cups old fashioned oats *use 2 cups for a softer texture
  • cup maple syrup or honey
  • cup peanut butter or almond butter drippy nut butters work best.
  • 2 tsp vanilla extract
  • 4 Tbsp walnuts or almonds for crunch
  • cup mini chocolate chips semi sweet
  • 2 tsp cinnamon
  • ½ tsp sea salt more for topping is desired

Instructions

  • Mix everything into a high power blender or food processor. You may need to open the lid and loosen with a spatula a few times.
  • The mixture should be thick and crumbly but hold together when you squeeze it with your hand.
  •  Line an 8x8 pan or bread load with parchment paper. Press the ingredients firmly with clean hands on a parchment paper lined 8x8 or smaller baking dish.
  • Place covered, in the fridge for bout 30 minutes - 1 hour just to stick together.
  • Bring the gluten free granola bars out and gently cut into squares or bars. Enjoy!

Notes

  • Use a drippy nut butter, typically the organic or "natural" brands have more liquid oil in them making them better for this recipe.
  • Use gluten free oats to make this recipe gluten free!
  • Almond butter, sunflower butter or cashew butters work great.
  • Use any nuts or seeds of choice. Texture is what makes these gluten free granola bars yummy.
  • Store leftovers in an airtight container in the fridge for up to 5 days. You can freeze these for up to 2 months (they will get a little crumbly after freezing)
