Coffee Cookies
Coffee cookies are delicious, made with espresso powder and melt in your mouth chocolate. Wholesome ingredients perfect with a cup of coffee.

- 1 cup old fashioned oats
- 1 cup all purpose flour
- ½ tsp sea salt
- 1 tsp espresso powder *see notes
- 1¼ tsp baking powder
- ¼ cup unsweetened applesauce
- 3 tbs slightly melted coconut oil
- 1 medium egg
- ½ cup white sugar *see notes
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Preheat oven to 350º .Add the dry ingredients to a bowl and whisk together: flour, baking powder, sugar, salt, espresso, oats. In a different bowl mix together the wet ingredients: vanilla, egg, slightly melted coconut, apple sauce.
Combine the dry ingredients to the wet ingredients. Lightly fold in chocolate chips. Texture will be sticky, use a spoon to dollop them and form a ball. I use a cookie scoop like this.
Place 1- 1.5 inch cookies on a parchment lined cookie sheet. Cookies will spread a little, I keep them somewhat close to each other. Bake for about 9 - 11 minutes.
Take out of oven and place on a cooling rack asap to have a softer center. They will harden a bit after they are taken out. try not to mess with them too much until they solidify! Add icing if using, dash a little extra espresso powder over them and enjoy!

store cookies in an airtight container in the fridge for up to 5 days or freeze in a ziplock for up to 3 months.
