Equipment

  • skillet

Ingredients

  • 1 pound ground chicken
  • 1 ¼ cup apple, diced I use fuji or gala
  • cup white onion, diced
  • 1 tsp garlic powder
  • ½ tsp celery salt or sea salt works
  • ¼ tsp nutmeg
  • ½ tsp cinnamon
  • ½ tsp celery seed
  • 1 tsp dried thyme
  • ½ tsp mustard powder
  • ½ tsp chipotle powder
  • 1 Tbsp oil for frying

Instructions

  • In a large bowl, add ground chicken, apple, onion, and seasonings. Use a ¼ measuring cup to scoop out meat. Form it into patties and add to a well-oiled skillet. I like the cast iron because it gives it a beautiful, browned crust.
  • Working in batches, add chicken patties in a single layer and cook for 5-6 minutes, flip, and cook for another 3 minutes or until browned and cooked through (patties will take longer if they are thick) Serve with breakfast or enjoy on a salad.

Notes

  • If you don't have ground chicken, you can make your own using boneless, skinless chicken breasts. Cut the chicken breasts into 1-inch cubes and place the chicken cubes in the food processor. Pulse the chicken in short bursts, about 10-15 times, until it reaches the desired consistency.
  • Grate or chop the apples finely to evenly combine them with the chicken and onions.
  • Before cooking, make sure the patties are flattened to about ½ inch thick so that you can easily cook them throughout. If you have thicker patties, you'll need to fry them for a slightly longer time.
  • Preheat and oil the skillet well before adding the patties to get a golden brown crust.
